I love a teachable moment with summer catering and holiday catering needs. Food businesses operating and food costs have gone up. Pizza at my local pizzeria is $25. A Big Mac costs $8. I want to share this to help with shifting the expectations around catering. It’s unrealistic to expect to get a caterer to charge $10 or $15 per person when the average caterer isn’t getting the wholesale rate that major restaurants are getting. I know there’s this “caterers are gauging “. In reality, they are trying to survive and/or run a profitable business. From 2020 to know, most independent caterers have experience anywhere between 30-50% increases in the COG and operating costs collectively. I am often asked what I look for in my businesses in order to gauge success. Like an old record, I keep repeating the following: All I want is to be proud of my products. Whether it's one of the restaurants I am involved with, our RTE line, CPG line, or Catering offering, I want to feel proud to showcase them to my friends and family. If it's good enough for the people I love, it should be good enough for our patrons/customers. So, keep it simple: keep raising your standards each day and do not accept mediocrity.
