And in honor of her joining the Easterseals' team, we’re going to share a healthy recipe with you every single Wednesday. So tune in for #RecipeWednesdays Our first recipe is for a Summer Peach Salsa 🍑☀️ For the full recipe and nutrition information, visit bit.ly/SummerPeachSalsa Ingredients: ● 5-6 medium fresh peaches (or 2 28-oz cans of diced peaches, no added sugar) ● 1 fresh tomato, diced (or 1 14-oz can of diced tomatoes) ● 1 whole medium red onion, diced ● 1 whole jalapeño, seeded and diced (adjust amount for spice preference) ● ½ teaspoon salt ● Juice of 1 lime ● ½ bunch fresh cilantro, chopped (optional) ● ¼ teaspoon chili powder (optional) Instructions: Combine all ingredients in a bowl and mix gently. Wrap the bowl in plastic wrap or pour the contents into an airtight container and place in the refrigerator for at least 1 hour before serving.

Another tool in my arsenal for fighting the Creeping Covid Crud -- Clara's Favorite Five Onion Soup. The onion family is large and ranges in pungency and taste from delicate scallions to garlic’s bold presence. The onion family is great for many health issues from heart disease, to clearing phlegm from allergies and colds to boosting the digestive system. This recipes makes excellent use of several types of onions and is quite simple to vary. In colder months, I may use beef broth for a richer base. It’s also lovely with whole pearl onions added in for more variety and flavor. Use with the cream or opt out if you have a lot of mucus and congestion. 4 Tbsp olive oil or butter 2 cups yellow onion peeled and finely chopped 2 large leeks, whites only cleaned and finely chopped 1/2 cup shallots peeled and finely chopped 1 clove garlic minced 4 cups chicken or vegetable stock 1/2 cup dry white wine 1 bay leaf 1 tsp thyme 3 scallions cleaned and trimmed 1/2 cup heavy cream optional-leave out if you have a lot of phlegm salt and pepper to taste In a large stock pot, melt butter or heat oil. Add in onions, leeks and shallots. Saute, covered over low heat until vegetables are tender about 20 minutes. Be careful to not burn or caramelize the onions. Add in stock, wine, bay leaf and thyme. Season with salt and pepper. Bring to boil then reduce heat and simmer for 20 minutes. Remove bay leaf. For a creamy soup, use immersion blender or blender to puree the onions. Be careful as the liquid is hot. Healing benefits: onions aid circulation, clear phlegm and benefit the heart - that's just the start. Energetics: Warming, Qi building, damp draining, invigorating. Aids digestion, breaks up phlegm and accumulations, clears the sinuses, tonifies the Lungs, Stomach and Spleen. Here’s to your healing! ✨Store-bought wraps aren't the best choice (even though they market them to look healthy!) Most of them are still heavily processed. If you love wraps, you'll enjoy this recipe! It's super easy and full of goodness! Rich in protein, fibre that encourages gut health and healthy fats to reduce inflammation. Flaxseeds are also hormone-balancing, so if you're in menopause, these should be your friend 😉 Here's the recipe: 🌱1 cup Water 🌱1/3 tsp Sea Salt 🌱2 cups Ground Flax Seed 🌱1/4 tsp Turmeric 🌱1/4 tsp Garlic Powder In a pot over high heat, bring the water to a boil. Add the salt. Remove the pot from the heat and stir in the flaxseed & spices. Continue to stir until a ball of dough forms, about a minute or two Turn the dough out onto a piece of parchment paper and allow it to rest until cool enough to handle. Divide the dough into equal portions. Heat a dry non-stick pan over medium heat. One portion at a time, roll the dough out approximately 8 inches in diameter between two pieces of parchment paper. Carefully transfer the rolled-out wraps to the pan, one at a time. Cook for one to two minutes per side until just browned but still soft in the middle (do not overcook). January is a time to look forward, but in this post I want to take advantage of Janus’ two faces and look back to December, and our issue no.12 of Volune 58. I want to highlight Carolyn F. Ross’s article on the importance of texture! Texture and Nutrition should go hand in hand, get one wrong and the other loses out. Get both right and you see eating quality as well as enrichment taking place. It has been possible for a while, but timing is everything and I feel we stand on the cusp of a whole new horizon in terms of personalised nutrition & texture now coming to the fore. We are able to deliver eating experiences to society’s vulnerable members which the rest of us take for granted. What a message of hope. And what better way to kick off the 60th birthday year of IFST. Enjoy the paper and ask yourself - where can I help?
