Prato da Casa: Salad Niçoise Cook Time: 25 minutes Yield: 1 serving Cook: Nancy Chiasson Ingredients: 1 can of tuna 1 Cup Cooked Green beans, 5-7 baby or fingerling potatoes, cooked and sliced in half 2 hard boil eggs, each egg sliced into 4 wedges ½ red onion, sliced thinly 1 Cup of Cherry Tomatoes Arugula 8-10 Olives Salad Dressing: 2 tbsp red wine vinegar 2 tbsp Dijon mustard Salt & Pepper ⅓ cup extra virgin olive oil Instructions: Arrange the arugula or lettuce leaves on the bottom. You want to generously cover the bottom of the plate with the greens. Scatter the potatoes all over the arugula. Arrange the beans nicely in the middle of the plate. Scatter the tomatoes and onion all around. Then, layer the tuna filets on top of the beans, followed by the eggs and olives around the edge of the plate. Dressing: Combine the vinegar, mustard and salt, and pepper and stir well until combined and creamy. Add the honey and stir well. Finally, add the olive oil in a slow stream and stir constantly until the oil is incorporated and you have a creamy dressing. Taste and adjust seasoning if needed, then spoon over the top of the salad.
