It allows brewers to enhance the organoleptic properties of beers! 🍻 𝐇𝐨𝐰 𝐝𝐨𝐞𝐬 𝐢𝐭 𝐰𝐨𝐫𝐤? 👇 • First, the grain is subjected to alternating dry and wet cycles in large tanks for 2 days. • When the barley is well-moistened, it is then spread into a layer about 10 to 15 cm thick on the floor. For 4 to 6 days, it is turned twice a day to maximize its oxygenation and dissipate heat. • Once the germination stage is reached, the green malt is sent to the kiln, to dry slowly for 48 hours. 💡 Unlike other methods, floor germination does not require artificial ventilation Thus, green floor malt beds tend to contain more CO2 than those in modern plants. This traditional technique results in a richer, more aromatic, and more intense malt.
