It’s spring and time to think green! 🌱🪴🪻🍇 This week I hosted an “Earth Day Somm Series” wine tasting for residents at 450 Washington featuring, organic, biodynamic and vegan wines from the Boisset Collection of premium French and California wines, paired with vegan and vegetarian pizza bites from Sullivan St Bakery. What’s the difference? Here are the basics: Organic wines are made from organically-grown grapes that have not undergone chemical intervention, i.e., synthetic fertilizers in the (viticultural) farming process. The US has even stricter requirements than the EU for a wine to be designated “organic.” In the US in order for a wine to display the USDA organic seal the (vinification) winemaking process must be all organic too, meaning that in addition to the grapes being grown without the use of synthetic fertilizers, all ingredients that go into the wines, including yeast must be certified organic. No chemical sulfites can be added to the wines, although naturally-occurring sulfites are permitted. Biodynamic wines are made using a farming method based on an astronomic calendar started in the 1920s by Austrian philosopher Rudolph Steiner. While most biodynamic wines are made using organic practices (avoiding chemical pesticides and using composts instead of chemical fertilizers), biodynamic farming is more mystical requiring additional governing practices like scheduling the farming around certain calendar days that coincide with the elements: earth, fire, air and water. In addition to following this calendar, biodynamic farmers use specific fertilization techniques, such as burying cow horns filled with compost in the vineyards to be dug up later and mixed with water to make a natural solution to fertilize the vegetation. Most biodynamic wines are in fact organic; all organic wines are not necessarily biodynamic. Vegan wines are wines that do not use any animal byproducts (e.g., egg whites) in the fining or filtration process in order to remove solid particles from the final product. Sustainable farming matters because it conserves our precious natural resources such as earth and water, keeps farm animals and human animals healthier, and many believe it makes a purer & better-tasting product.
