Chicago’s IFT FIRST conference is in full swing with food scientists, nutritionists, policy makers, and more joining together to discuss the future of food. Yesterday, Edible’s Executive Vice President Adelaide Feuer (Geik), RD spoke on the panel titled “How Can Novel Technologies and Innovations Be Created in an Environment of Consumer Mistrust, Anxiety, and Pseudoscience?” She and her fellow panelists broke down the mistrust and anxiety consumers face when exploring new innovations in the industry including generative AI, cell cultured meat, and GLP-1s. The panelists shared three key takeaways for PR specialists to keep in mind when communicating novel technologies to consumers: ✔ Innovation must be collaborative. While business is the most trusted to manage innovation, to be competent and ethical, it can’t go at it alone. Businesses must partner with governments and NGOs and address broader societal consequences, such as the impact on jobs and ethical concerns. ✔ When it comes to communication: Scientists and technical experts are the most trusted voices when it comes to innovation, but we must find ways to better explain the science transparently, engage in dialogue, harness peer voices, and address the challenges of misinformation. ✔ People need to feel like the future is in their control: Listen for concerns, be open to questions, engage in dialogue with multiple stakeholder audiences, including the public. What and how we eat is constantly shaped by various factors, including technology and changing social and environmental issues. 🍽️💻 Co-edited by myself, Xin-Jean Lim, Isaac Cheah and Colin Michael Hall. 📳 The rise of digital food culture, propelled by smartphones, food delivery apps, and social media platforms like Instagram, has ushered in a new era of "digital palates" and convenience-driven consumption habits. However, alongside this convenience come challenges, such as the risk of 'filter bubbles' limiting culinary exposure as well as exacerbating public health concerns like obesity and environmental issues such as biodiversity loss and climate change. 🥗 🌍As a result, consumers are increasingly opting for plant-based diets and ethical as well as healthy food choices, blurring the lines between traditional and digital food experiences. 🔎 To fully grasp the complexities of this digital food culture, interdisciplinary research is key. We need insights from cultural studies, nutrition science, public health, environmental studies, sociology, psychology, geography, marketing, consumer studies, and economics. My colleague, Adams Berzins and I had the pleasure of speaking at the ISOT Conference earlier this week in Reykjavik, Iceland. Methods ontologies are new but very important, as information about how research has been done is not yet sufficiently accessible to machines. Visit - Takeouts: People ♥️: wonderful event to exchange with old peers and partners and make some new connections too. Thank you all. Science 🧬: center of many discussions was - no news - AI - and how it transforms research. Good insights on how AI can help increase data efficiency and credibility on the data gathering and analysis side. What else 🙋♀️: No news that sensory remains number 1 criteria for repeated product purchase and that the journey to healthier and more sustainable products is one we as food industry experts can only take together. Does AI know a shortcut? Not yet, but it’s up to us to explore the possibilities & share the learnings to be closer to our goals tomorrow.

If this is our present, I can only imagine what our future holds. If once LOTUS 123 was enough, today Power BI is handling ever-larger databases. The data revolution is increasingly becoming part of our everyday lives. My annual check-up results are available on an app with historical charts from the past 10 years. I envision a near future where toilets will measure our glucose and creatinine levels and, through advanced AI, suggest dietary changes based on the results. A revolution is unfolding before our eyes. #FutureTech #DataRevolution #Innovation #DataVisualization

Last week I had the opportunity to attend 6Degrees.Ai’s Brisbane event on The Future of Tech, Innovation & Work. Despite not being technical by trade, here are my top takeaways from an event that was brilliantly put together. 1) AI should be boring… for now. There is a lot of excitement around AI at the moment, understandably. The future in this space is so bright and the potential is huge. However, a Data and Analytics Customer Engineer at this event spoke about how most of the current practical applications of AI are fairly simple and focused on basic and repeatable tasks. At the moment, it is a tool to complement your other tools, not to replace them. 2) Australia is leading the way for AI... but we're also the most nervous Interestingly, the Director of National Artificial Intelligence Centre spoke about how Australia is the most nervous towards AI than any other country. Despite this, we are still leading the way in various areas of AI applications, including in laboratory technologies and in livestock and horticulture. 3) Getting the data right Data is foundation of AI, and every panellist at this event spoke about the importance of ensuring you are using relevant data. AI, by nature, learns from the information it is fed; therefore, any mistakes or wrong information it is fed can lead to “hallucinations”. Given how AI learns, this becomes a compounding problem and stresses the importance of protecting the data sources.
