In recent decades, global meat consumption has steadily risen, driven by the advent of industrialized agriculture and the increasing availability of affordable meat products. While this might seem like a positive development for ensuring access to protein, the overall quality of the meats consumed has significantly declined. Beef, a nutrient-dense and high-quality meat source, has remained stable or even declined in consumption, while cheaper alternatives like chicken, pork, and fish have surged in popularity. Dough-lightful news! 🍪🔬 I'm thrilled to share the publication of my first paper, titled "Mixolab thermo-mechanical behaviour of millet flours and their cookie doughs, flour functionality and baking characteristics" in the esteemed Journal of Cereal Science (Volume 116, March 2024, 103866). I am immensely grateful for the guidance and unwavering support of my mentor Dr. Hardeep Singh Gujral. From providing invaluable insights and expertise to offering encouragement during challenging times, Sir has been a constant source of wisdom and inspiration in shaping my Master's dissertation work. This journey has been a fascinating exploration of the unique characteristics of nine different millets: pearl, finger, sorghum, foxtail, little, kodo, barnyard, browntop, and proso, and further their comparison with wheat. 🌾 From the moment we began our experiments, analyzing the thermo-mechanical behaviour of these millet flours and their cookies doughs using the Mixolab, to finally preparation of cookies from each millet, each millet brought its own distinct qualities to the table. The Mixolab behavior of these nine millets differs significantly among each other, and furthermore, their thermo-mechanical behaviour differs greatly from wheat, making this a novel comparative study. Plan is to grow our dairy herd a little, beef x dairy #’s will probably stay close to the same. I agree though, now is the time to take advantage of low feed prices where & when you can. In our case we’re looking at bagging some silage vs silo/bunk storage to free up a bit of space for purchased feed.
