We all have a role to play in sustainable food systems, as the issues at hand can only be addressed through collaboration across the food and packaging value chains. ERM recently collaborated with Booking.com and UN Tourism to create a course for hotel, B&B, and restaurant operators, focusing on sustainable food management and highlighting easy wins and more complex initiatives and campaigns. Rob Fetter, ERM’s Principal Consultant, Corporate Sustainability and Climate Change, who put together the advice for the service providers, hopes everyone can find useful takeaways for approaching this global issue. “As a consumer, I found assembling all this info and identifying manageable solutions helped me focus where to change my buying decisions, and even to make supportive suggestions at a few spots I frequent.“ Other courses in the series address energy, water, and community engagement. There are so many opportunities to make food service more sustainable *and* enhance the guest experience - but it can be overwhelming to navigate. I'm grateful Booking.com and UN Tourism gave us (and me!) this opportunity to distill and present easily digestible information for hospitality providers.
