The challenge with soffits/overhangs is maintaining a perfect thermal envelope around the building. While it might be easier to eliminate soffits or overhangs, I firmly believe in their necessity. They protect the walls, windows, and doors from the sun and heavy downpours, whilst also making it simpler to control the interior environment in summer. Exterior insulation, weather resistant barrier, and airtight layer all-in-one. The Zip r6 sheathing from @huberwood does all this (after taping and flashing of course). Exterior insulation has been likened to a sweater or coat that fully surrounds the exterior providing continuous thermal bridge from the outside to inside. This is one of the most important components that should be in every home. Not all exterior insulations are the same however. Zip r6 panels are 1-1/2” and provide an r-value or 6.6. This far beats the cheap white foam the stucco subcontractors use (by far most common install method for Arizona). This will equate to less energy usage and a far more comfortable environment for the occupants. Why build a house that is built using the same materials and techniques as a tract house?
