While we don't certify products made with any of these oils, the evidence suggests some seed oils are more detrimental to health than others. Another Category of Seed Oils Not all seed oils are equally problematic. In contrast to harmful seed oils like soybean, sunflower, canola, and corn oil, there are other seed oils that are less refined, less prone to oxidation, lower in inflammatory omega-6 fats, or higher in nutrients and antioxidants. At the Seed Oil Free Alliance, we've categorized certain types of seed oils as Other Seed Oils. It's a matter of intellectual honesty. Sesame oil is an excellent example of a traditional seed oil that can be produced without modern industrial methods. Its use as an edible oil dates back thousands of years. It's high in plant-based antioxidants and often used as a seasoning ingredient today. While we don't certify foods containing sesame oil or any Other Seed Oils, they're not as problematic as harmful seed oils high in polyunsatured fats such as soybean oil, sunflower oil, corn oil, and canola. Factors affect the fractionation fats, oils: Oils and fats varieties and their quality Different types of oil and fat have different components of triglycerides. Palm oil, cottonseed oil, rice bran oil, etc. crystallize easily after cooling to crystallize, which is easier to separate. For some oil, such as peanut oil, the crystals obtained by freezing are colloidal crystal bundles and cannot be separated. It can be seen that the feasibility of industrial fractionation depends first on the type of oil, that is, the composition of triglycerides. ① GUM. The colloidal impurities in oil and fat may increase the miscibility of various triglycerides and the viscosity of oil and fat, and become crystallization inhibitors. In addition, at low temperatures it is possible to form colloidal copolymers, thereby reducing the filterability of the fat crystals. Therefore, the oil must be degummed and adsorbed in advance. ② FFA. Due to the high solubility of free fatty acids in liquid oil, it is easy to form a eutectic with saturated triglycerides, so that some saturated triglycerides enter the liquid oil with it, which hinders crystallization and reduces the yield of solid fat. According to research, when the content of free fatty acids reaches 7%, it will affect the crystallization of oil. However, some people think that the proper amount of free fatty acids acts as seed crystals, which is helpful for fractionation, but this is likely to be for solid fatty acids. ③ Diacylglycerol. Most of the diacylglycerol in natural oil and fat are intermediate products in the process of synthesizing triglycerides in plants. In the fractionation process, it can reduce the solid fat index of fat and oil, form a eutectic mixture with triglycerides, and delay the formation of α-lipid crystals, delay the conversion of α-lipid crystals to β ′ or β type, thus hindering Fat crystal growth. It is generally believed that if the content exceeds 6.5%, the crystal blocking effect will be strengthened. It is worth noting that the solubility of diacylglycerol in triglyceride is large, and it is difficult to remove. ④ Monoglyceride. Monoglyceride has emulsifying properties, and it acts as an impediment during solid fat crystallization. When the content exceeds 2%, it inhibits the formation of crystal nuclei. In addition, when using polar solvents (such as acetone, isopropanol) for fractionation, monoglyceride has the effect of dispersing water, which reduces the polarity of the solvent, which in turn affects the separation efficiency. The monoglyceride is more active, and its content can be reduced by the alkali refining method or physical refining method. ⑤ Peroxide. Peroxides will not only reduce the solid fat index of fat and oil, but also increase the viscosity of fat and oil, which will adversely affect crystallization and separation.
