Earlier this summer, experts on the Hospitality Net World Panel on Sustainability in Hospitality discussed and debated on the promising yet complex relationship between artificial intelligence and sustainability in the hospitality sector. 🌍 Leading the Way in Sustainability: Marriott Hotels Bold Steps Against Food Waste 🌱 In a significant move towards sustainability, they’ve rolled out Winnow AI technology across 53 hotels in the UK, Ireland, and Nordics, aiming for a 50% reduction in food waste by 2025 Following an impressive 25% decrease achieved in early 2024. How does it work? The Winnow AI system employs a sophisticated combination of a camera, weighing scale, and AI to analyze food waste in real-time. By capturing images and quantifying waste, kitchen teams receive valuable insights, enabling them to make informed decisions about portion sizes and menu adjustments. As Joanna Chugh, Area VP for UK, Ireland, and Nordics, stated: “If you see a lot of waste from specific dishes, you know you are serving too much.” But it doesn’t stop there! Marriott is also focusing on: Menu engineering: Adjusting dishes based on waste data. Responsible dining awareness: Educating guests on mindful consumption. Creative repurposing: Transforming surplus ingredients into new culinary delights, like turning banana peels into pulled pork for vegetarian burgers. Additionally, surplus food that can’t be repurposed is donated to food banks and initiatives like Too Good to Go, ensuring that good food doesn’t go to waste. Marriott’s commitment to sustainability shines beyond just food waste. With all managed hotels in the region Green Key certified, they’re also championing initiatives such as Meat Free Monday, energy-efficient practices, and even growing herbs in rooftop greenhouses.
