I'm researching niche markets for an app I'm working on. Found this enlightening, and even brilliant. Ever wonder why there are now so many Thai restaurants? From Food & Wine magazine: Gastrodiplomacy, also known as culinary diplomacy, involves a country using food as a means of globalizing and gaining international influence. This was something Thailand was particularly skilled at. In 2002, the Thai government launched the Global Thai Program, a diplomatic initiative with the aim of increasing the number of Thai restaurants worldwide. The state provided training programs, grants, and information to Thai investors who wanted to open restaurants abroad. As part of this campaign, Pad Thai — a dish with virtually no cultural history — was positioned as Thailand's national dish and pioneered a culinary campaign funded by the Thai government with 500 million baht ($15 million USD). The government believed that the project would contribute to agricultural and food exports, while also producing foreign income from overseas transactions of goods and services. It worked. Thailand's cuisine has become a global phenomenon as a result of the project. By 2011, the global number of Thai restaurants had increased to more than 10,000 and the nation positioned itself as the “kitchen to the world” by advancing the exceptional quality of Thai food around the globe and becoming a food capital for the world. It also laid out strict standards for what diners can expect on menus. Thailand's Department of Export Promotion designed prototypes for three different styles of Thai restaurants: Elephant Jump for fast food, Cool Basil for mid-priced casual cuisine, and Golden Leaf for high-end meals. Thai restaurants abroad can be awarded the Thai Select award by the Thai government, as long as their restaurants abide by the government’s standards. To be considered authentic and high quality, these restaurants abroad must meet certain criteria during inspections, including being open for at least five days a week, employing government-trained Thai chefs, and using Thai products. These standards may ensure the quality of the restaurants, but also contribute to a standardization of Thai food and by extension, perceptions of Thai people.

In the bustling streets of Jakarta, a culinary icon has emerged as a favorite among locals and visitors alike. According to Muniyo Quick Polling, Nasi Uduk has captured the hearts of 41% of people, making it a staple in their daily breakfast routines. This article delves into the history, characteristics, and reasons behind the popularity of Nasi Uduk as the go-to breakfast choice in Jakarta. Nasi Uduk's origins are deeply rooted in the cultural melting pot of Jakarta. The dish emerged as a result of the cultural exchange between Malay and Javanese communities in Batavia (now Jakarta) during the 17th century. It is believed to have originated from the blending of Malay's Nasi Lemak and Javanese's Sego Gurih. Malay traders and immigrants brought their signature dish, Nasi Lemak, to Batavia. This dish is characterized by its use of coconut milk and spices, which were later incorporated into Nasi Uduk. Javanese settlers in Batavia introduced their own method of cooking coconut rice, which merged with the Malay tradition to create Nasi Uduk (kompas.com, Erwin, 2018). Nasi Uduk is characterized by its use of specific spices and condiments when cooking the rice in coconut milk. The dish is traditionally served with a variety of side dishes, including semur jengkol (spicy jengkol stew), orek tempe (stir-fried tempeh), and sambal (detik.com). The name “Nasi Uduk” has several interpretations, one of which suggests it comes from the word “uduk,” meaning “difficult” in Betawi, as Nasi Uduk was once considered food for the poor (Akademi Kuliner Indonesia, 2016). Today, Nasi Uduk can be found in various settings, from traditional markets like Pasar Pagi to modern street stalls and even fast-food chains. The dish has adapted to modern tastes, with some vendors offering minimalistic side dishes and a more premium price. However, the traditional method of serving Nasi Uduk wrapped in banana leaf remains a popular choice, especially in stalls that operate from night to dawn. Nasi Uduk is not just a meal, it's a cultural experience, thus it continues to captivate the hearts and taste buds of people, making it a true culinary icon of the city.
