Cosmic Crisp are one of the best storing apples from my experience. They are available year-round due to improved technology that works with the natural science of the apple to reduce food waste! 💚
This is how:
🍎 Bins of fruit from farms like mine are immediately tested for starch & sugar levels which determines the time spent in a cold room. (Cosmic Crisp flavor deepens after at least a month in storage)
🍎 Controlled atmosphere (CA) rooms hold the apples in perfect conditions of nearly 0% oxygen, roughly 34°, and with the constant removal of Co2 and ethylene (the ripening gas fruit gives off)
🍎 Once a room is opened, fruit is packed & shipped to grocery stores all over the world as quickly as possible to give you all the best eating experience possible.
🍎 Apples are rinsed, scrubbed, and sorted several times before they are put into a box or bag.
🍎 During the cleaning process the natural wax, or cuticle, of the apple is mostly taken off. So a thin food grade wax layer is applied mostly to prevent apples from losing their water content & shriveling. It doesn’t hurt that they look shiny too;)
🍎 There are different waxes used across the industry but typically a bee wax or carnauba wax is used! (No, not Apeel).
🍎 Most Cosmics are packed by hand and are sorted by color, number/size of defects, and the size of the apple!
Big shoutout to Stemilt Growers for letting me come by, they do a great job! These warehouses take care of a lot of fruit coming from hundreds of family farms like mine. How the fruit is packed is the determining factor of how we as farmers, get paid. Because of this, technology, precise storage, & skilled workers can make or break us, and determine your eating experience. Making this process VERY important for both you & I. 😊

A great article I read this week on the Food & Wine website is California has just become the first state in the U.S. to remove "Sell By" dates from food products, thanks to new legislation aiming to reduce food waste. 🍞🥛
The article highlights this groundbreaking step, which could have a major impact on sustainability and food security. The old “Sell By” dates often confuse consumers, leading them to throw away perfectly good food. By switching to more informative labels like "Use By" or "Best By," California is helping consumers make smarter decisions, saving both money and the planet.
With 40% of food in the U.S. going to waste each year, this change is long overdue. Let's hope other states and countries follow suit!
This is a great reminder that sometimes, innovation starts in the most everyday places — like the labels on our groceries.

California has become the first state to ban “sell-by” dates on food labels, replacing them with standardized terms like “Best if Used By” and “Use By” to reduce confusion and food waste. This shift is expected to save 70,000 tons of food annually and cut down on greenhouse gas emissions. As a dietitian, and a former Director of Food and Nutrition Services I support this policy for its potential to prevent unnecessary waste and improve sustainability in our food systems.
