Last week I was lucky enough to attend a site tour of the new Sydney Fish Market. Although it’s still under construction, it is definitely going to be an impressive facility! The new Fish Market aims to support tourism and the fishing industry and will return inaccessible parts of the harbour foreshore to the community. Thank you, Paul Nicolaou and Business Sydney, for the introduction to the Hon Steve Kamper MP, Minister for Lands and Property and inviting me along to view the construction progress. The foodservice industry is responsible for for a huge amount of food waste. One-third of all food produced globally is lost or wasted. This not only harms the environment but also business profitability. There are several ways foodservice businesses can reduce food waste. Some of my favourite methods include: ⭐ Monitoring your food waste to work out where it is coming from and how to reduce it. ⭐ Reducing your potion sizes to ensure customers finish their plates and don’t leave excess food. ⭐ Use the FIFO method - food in and food out - to ensure older produce is used before it can go off.
