What do you eat when flying ? I’m headed to LAX via Delta… I always swing past the Sky Club! Breakfast is small bites and repetitive … Two mini potatoes , Two almost burnt Chicken sausages, Oatmeal w. golden raisins and brown sugar (half a scoop) and a real cranberry juice to cleanse the palate …. More food for thought tonight. As I looked down at my beautiful pan of pesto chicken stuffed tomatoes, I wasn’t dismayed that some of them had fallen apart in the cooking process. In fact, I found a little delight in the destruction. Those tomatoes caved under the pressure Of the heat Of their contents From the time it took for them to arrive on our plates But those tomatoes still fed our hungry bellies. Those tomatoes still tasted excellent. Those tomatoes were still ENOUGH. If you’re currently bent, broken, shattered from the pressures of this world - remember: You are ENOUGH. You can still feed and fuel this world in ways others can’t. Even if you’re destroyed by the tests. Even if you’ve caved under pressure. Even if you don’t outwardly look like you’ve “got this”. Remember - YOU DO, the moment you set your mind to it. Stay the course. Stay mentally tough even when the world tells you it should be impossible. We can’t help it not to think about food development during the weekend so we even develop and make food products in our spare time! Just for fun! We got some fresh milk from our local milk tap and made this wonderful halloumi. How did we do this? 1. Collect 10 L of real raw farmer’s milk which is unpasteurised and unhomogenised. 2. Heat the milk to 37°C. 3. Add rennet, cover and hold for 1.5 h. 4. Cut the curds. 5. Slowly raise the temperature to 40°C and hold for 20 min. Slowly stir. 6. Filter off the whey (don't throw this away!) and keep the curds. 7. Press curds into shape. 8. Boil in their own whey until they rise to the top. 9. Salt from both sides. 10. Allow to cool. 11. Your halloumi is ready to be eaten! 🤤 #cheese #foodproductdevelopment #recipes

Both are peak potato perfection: a golden colour, soft on the inside and ultra-crispy on the outside. Unfortunately, that beloved crunch fades fast. Leave your fries or wedges alone for too long, and punishment comes quickly: a mushy mess. At Solina, we wanted to find a way to extend the lifetime of that much-craved crispiness.
