PRODUCERS, MARKETERS, INNOVATORS! We are excited to share news about our collaboration with the team at Envirostrat. We recently embarked on a project called Kinanomics which involves a range of sensory research techniques applied to a unique seafood species: New Zealand sea urchin, best known by the Māori name Kina. Kina is a traditional food for Māori. This collaborative project aims at gathering sensory data to measure taste and sensory perceptions of Kina fed a special diet, which will potentially transform how we farm Kina in New Zealand and create sustainable growth of a global export. We are using our sensory expertise to assist in determining specific Asian consumer taste preferences, setting a pathway to developing an overarching taste profile for Asian markets.
