Using oak and mesquite, woods with low resin content, ensures that the agave doesn’t become overly saturated with smoke. Oak, with its slow burn, provides a constant heat that allows the agave to cook evenly, bringing out its natural sugars without burning them. Mesquite, on the other hand, adds a sweeter and more robust flavor, but its low resin content prevents the smoke from overpowering the mezcal’s profile, achieving a balance between sweetness and smokiness. These woods, because of their low resin, allow mezcal to have a cleaner, more authentic character without overwhelming the agave with too much smoke. This is essential, as the balance between smoky flavors and the natural sweetness of the agave is what distinguishes a great mezcal. The combination of both woods adds depth and complexity to the final product without overshadowing the agave's natural qualities. In addition to their impact on flavor, using oak and mesquite is also natural choice. Both woods are native species to the mezcal-producing regions, allowing for a responsible and harmonious use of local resources fully respecting artisanal traditions. This sensation is due to an enzyme called bromelain, which breaks down proteins and can irritate the delicate tissues in our mouths. Plus, the acidity of pineapple can intensify this effect. Did you know that unripe pineapple can make this sensation even worse? Have you ever wondered why pineapples were once considered a symbol of luxury and hospitality? We will discuss all these later, but today, let's learn about the history of pineapples. Pineapple (Ananas comosus) is native to South America, particularly Brazil and Paraguay. Indigenous peoples in these regions cultivated and consumed pineapples for centuries before European arrival. Christopher Columbus and his crew encountered pineapples on the island of Guadeloupe during their second voyage to the Caribbean in 1493. They called it "piña" due to its resemblance to pine cones. The Spanish and Portuguese explorers brought pineapples back to Europe, where they became a symbol of luxury and hospitality among the European elite. Portuguese and Spanish traders introduced pineapples to Asia, where they were successfully cultivated in countries like the Philippines and Thailand. In European and American cultures, pineapple became a symbol of hospitality and welcome. It was often used as a centerpiece or decoration in homes and hotels. Pineapples featured prominently in art, architecture, and design during the Renaissance and Baroque periods, symbolizing luxury and exoticism. Today, pineapples are widely consumed worldwide, both fresh and canned. They are used in culinary dishes, juices, desserts, and cocktails.
