Yesterday, logging onto LinkedIn, this was the headline of the very first post in my feed, "Ultra-processed food saves lives, feeds billions". Just three posts below this, another headline, "Ultra-processed foods are killing us and the planet". The truth, of course, lies somewhere in between: Ultra-processed foods are many and varied, with potential harms and benefits, depending on type and context. We have much still to learn about how the many different degrees and types of food processing affects short- and long-term health outcomes, for which they are far from uniform. And even once more is known, we must not forget that the degree and type of processing is just one factor, that needs to be considered alongside the nutritional and bioactive component of a food, amongst much more. Sure, an extreme stance is fun, easy, and can make for a catchy headline. But an appreciation of nuance and acknowledgement of the unknown is more useful, and moves us closer to the truth.
