Every now and then you need someone else to cook for you, to bring you a nice drink, and to do the dishes for you afterwards… agreed? How lucky are we then, in Australia, to be surrounded by talented and ambitious people who often work ridiculously long hours and sometimes risk everything simply so they can provide you with such a wonderful service? Going out now and then to discover local establishments is delightful and so good for your soul isn’t it? When you find that perfect combination of fine dedicated professional service, great food, excellent wine selection, beer, spirit or cocktail choices all wrapped up in a beautifully maintained establishment with well thought out ambience, you have indeed hit the jackpot… Funnily enough, in order to make a restaurant, hotel or wine bar run as smoothly as clockwork, surprisingly it’s what you don’t see that makes for a world class and seemingly effortless dining experience, and that my friends is the true art of hospitality… You don’t see training. You don’t see hours of kitchen prep (mise en place) and dining room set up. You don’t see cobwebs. You don’t see crumpled menus. You don’t see tired or lazy wine lists. You don’t see coasters stuck under wobbly tables. You don’t see lunch crumbs on the dinner floor. You certainly don’t see sticky front door handles and you don’t see grumpy staff. You see a dedicated team living to create lasting warm fond memories that are truly embraced, by you, their guest, long after any price asked for is forgotten. That feeling of pure dining pleasure, and being looked after professionally, in a courteous manner, along with sharing precious moments with your chosen companions is indeed priceless.
