Understanding Egg Quality: The Role of the Haugh Unit and Roche Score
In the world of egg production and grading, assessing egg quality goes beyond the shell. Two key measures, the Haugh Unit and the Roche Score, provide valuable insights into the internal quality and freshness of eggs.
🌟 Haugh Unit: A Measure of Freshness
Developed in 1937 by Raymond Haugh, the Haugh Unit objectively measures egg quality by relating the height of the egg white (albumen) to the weight of the egg. The formula is simple, but the insight is critical: the higher the Haugh Unit, the fresher the egg. Fresh eggs have thicker, firmer whites, which gives them a higher Haugh Unit score—an essential criterion for grading.
🌟 Roche Score: The Color of Nutrition
The Roche Score evaluates the color of the egg yolk using a standardized color scale, ranging from pale yellow to deep orange. The score is influenced by the hen’s diet, particularly its intake of carotenoids, which not only affects appearance but often indicates nutritional content.
Why It Matters:
For egg producers and consumers alike, understanding these measures ensures better-quality eggs. A higher Haugh Unit reflects freshness, while a richer Roche Score reflects nutrition. These quality indicators help maintain high standards across the supply chain—from farm to table. 🍳
Stay informed and ensure your egg quality meets the highest standards!

The FDA issued draft guidance on new voluntary sodium targets last month.🧂 These new targets build on the guidance released back in October 2021 and propose new three-year sodium reduction targets for 16 overarching food categories and 163 food subcategories.
Public health nutrition advocates have long been calling for further action on reducing sodium as current consumption is well above the recommended limit of 2,300 mg/day. The draft guidance proposes reductions of average sodium intake from 3,000 mg/day to 2,750 mg/day. Americans currently consume around 3,400 mg/day, on average.
You might be wondering if the prior guidance from 2021 was effective in reducing sodium and the answer is sort of. A preliminary assessment found that 40% of food categories had reached the Phase I sodium targets or were within 10% of meeting the targets. But in restaurants, 49% of the food categories actually increased in sodium levels. I recently learned that a bowl of chicken noodle soup from one specific restaurant chain contains over 10,000 mg of sodium, highlighting the immense amount of work that needs to be done in the restaurant sector to reduce sodium.
If you are interested in learning more about the draft guidance you can visit the link below and the request for comments on this topic is currently open until November 14, 2024.

We had a great time at the DSHEA Summit in Salt Lake City, UT
United Natural Products Alliance and NutraIngredients put together a great event, as always
It was interesting to hear from the folks who actually developed DSHEA
A few key takeaways:
1. FDA data related to inspections seems quite self-congratulatory when we, anecdotally, have seen a sharp decline in the quality of inspectors. As we know and was restated today, dietary supplement facility inspectors are first and foremost trained for food inspections and “dietary supplement training is available” - if it’s available, is it not required for those inspecting DS facilities? There’s a major gap here when we look towards protecting a $60B industry.
2. Mandatory Product Listings (MPL) continue to be a polarizing topic. I have thoughts (against) MPL but will save those for another post!
3. New Dietary Ingredient Notifications (NDIN) remain a challenge with FDA. Looking forward to Final Guidance here.
4. FDA - and many within the industry - have a limited understanding of the role influencers play in the modern supplement industry. My perspective? If you engage an influencer as a brand, they must receive some type of training and/or guiderails to ensure they don’t overstep when making claims. There’s a massive education opportunity here.
5. As an industry, we outpace FDA and always will. The dominant retailers and platforms like Amazon, Whole Foods Market, etc., and their requirements shape the industry beyond the confines of regulatory requirements and enforcement.
Great to hear from:

And many others!

We can’t rely on FDA to keep our consumers safe or the industry honest; which is exactly why we built Qualitas Executive Group. With bright minds like Amber Rowley and Carly Tolman, we are ready to repair a fractured industry.
