Did you know that enzymes make your beer clearer and more stable?? 🍻 During the brewing process, proteases are added to break down proteins that can cause haze in beer. Bubbly stuff incoming! 🍾 🥂 🫧 With this brite tank we can now provide small batches of sparkling products (either force carbonated or charmat/bulk method). Brite tanks are very similar to standard glycol jacketed wine tanks, but they are able to contain much higher pressures to allow for carbonation. Beverages are either “force” carbonated or charmat/tank/bulk carbonated. Force carbonation uses a “carb stone” (stainless tube with zillions of microscopes holes in it) connected to a high pressure CO2 source and regulator to dissolve CO2 into the liquid over time to a specific pressure at the set temperature. Then it’s ready to package! Bulk/tank/charmat method uses yeast and a “dosage” of additional sugar (more juice, sugar, concentrate, etc) added to the beverage to produce additional CO2 (and alcohol) at a pre-calculated rate based on the sugar added. The wine is then racked off of the lees or filtered directly into packaging. With this tank we can now make: 🍇 sparkling wines 🍎 sparkling ciders 🍊 sparkling sangria 🥤 Coke (wait, not that one!) #PVPP #FOODGRADE #BREWERY #E1202 Clarification is the name given to any process where solids are removed from wort or beer to give a clear liquid. Wort clarification is important because beer produced from clear or “bright” wort tends to be of higher quality. Wort clarification takes place in the brewhouse after it has been boiled in the wort kettle or copper. It may involve a “whirlpool” if hop extracts or pellets are used, or a “hop back” when whole leaf hops are used. Worts that have not been clarified may be slow to ferment, and the resulting beer may be difficult to filter, or may be difficult to clarify in cask using finings. Beer clarification can involve different processes. Filtration is the most commonly used. Centrifugation is another method of clarifying beer. In this process excess quantities of yeast and protein are removed from beer in the brewery before filtration. Beers are easier to filter if excess solids are removed before final filtration. Arabica semi-wash coffee is a processing method that involves several distinct stages: 1. Harvesting: Arabica coffee cherries are harvested from the coffee trees. 2. Separation: Coffee beans are separated from the cherries using various methods, depending on the semi-wash processing technique employed. 3. Fermentation: The coffee beans are typically fermented in water for several hours to remove some mucilage and the remaining fruit layer adhering to the beans. 4. Drying: After fermentation, the coffee beans are dried, either by sun-drying or using drying machines. The semi-wash process creates coffee with characteristics that lie between fully washed and dry-processed coffees. It results in cleaner coffee than dry processing but retains some moisture and fruit layers, offering a slightly higher flavor complexity than fully washed coffee.
