My mom worked long hours and this recipe helped her create several meals out of one dish. She was not only making chicken broth, but she also made an orzo or pastina soup recipe, a chicken salad recipe, and a mashed potato and carrot recipe. Today is the National Day of 🇸🇪Sweden! Let's cook Köttbullar (Meatballs), a traditional Swedish dish. 🧆Prepare the Meatballs: Mix ground beef and pork with white sandwich bread, minced onion, an egg, oil, salt, pepper, and a pinch of nutmeg. Form the mixture into small, round meatballs. Heat butter in a large skillet over medium heat. Fry the meatballs in batches until they are browned on all sides and cooked through, about 7-10 minutes. 🥣Make the Sauce: Remove the meatballs from the skillet and set aside. In the same skillet, melt some butter and whisk in flour to form a roux. Gradually add beef broth and cream, stirring continuously until the sauce thickens. Return the meatballs to the skillet and simmer in the sauce for a few minutes. 🍒Serve the meatballs with lingonberry jam, mashed potatoes, and a sprinkle of fresh parsley. Ingredients 125g salmon fillet 75ml kefir 1 x clove garlic, peeled & finely grated 1 pinch salt flakes 1 stick celery cut into batons 1/2 400g tin haricot beans 2g dill, fresh finely chopped 2 tbsp capers 1 pinch black pepper 1.5 x carrots, peeled & cut into batons 1/4 cucumber, cut into batons Method 1. Place the cooked salmon, beans, kefir, dill and garlic into a bowl. 2. Mash thoroughly with a fork. Stir through the capers and season with salt and black pepper 3. Chessy Broccoli Bites Ingredients 2 cup broccoli, florets 2 large egg 1/2 teaspoon salt 2 ounce Parmesan cheese, grated 2 tablespoon olive oil Instructions Steam broccoli just until fork-tender. Add broccoli, egg, salt, and Parmesan to a food processor; blend just until finely chopped. Using 1 tablespoon at a time, form into balls. Heat oil in a skillet. Drop balls of broccoli mixture into hot oil, flattening with a spatula. Cook both sides until crispy. Serve warm. 2 Servings: 1/3 lean, 2 greens, 1 HF, 2 condiments

This #GrainFieldChickens Chicken in red wine is hearty, flavourful and perfect for enjoying on a cold winter's night. You will need: * 1 Grain Field Chickens whole chicken, cut into pieces * 4 slices bacon, chopped * Salt and pepper * 1 large onion, chopped * 2 cloves garlic, minced * 2 carrots, sliced * 2 tbsp Super Sure flour * 2 cups red wine * 1 cup chicken broth * 1 tbsp tomato paste * 1 tsp dried thyme * 1 bay leaf * 1 pound mushrooms, sliced * Fresh parsley, chopped (optional) Method: 1. In a large pot or Dutch oven, cook bacon over medium heat until crisp. Remove bacon and set aside. 2. Season chicken with salt and pepper. Brown in the bacon fat until golden on all sides. Remove chicken and set aside. 3. Add onion, garlic, and carrots to the pot. Cook until tender. Sprinkle it with flour and cook for 1 minute. 4. Stir in red wine, chicken broth, tomato paste, thyme, and bay leaf. Bring to a boil. 5. Return chicken to the pot. Add mushrooms and cooked bacon. Reduce heat and simmer for 45 minutes, until chicken is cooked through and tender. 6. Remove bay leaf. Serve coq au vin with mashed potatoes or crusty bread, garnished with fresh parsley if desired. When people ask me what the first thing they should cook on their new Alchemy, I usually say “chicken”. Often the response is, “really, chicken, that’s not very fun”. Slow Cooker Beef Stew Ingredients: 2 lbs beef stew meat, cubed 4 carrots, sliced 4 potatoes, diced 1 onion, chopped 3 cups beef broth 2 tablespoons tomato paste 3 cloves garlic, minced 1 teaspoon thyme 1 teaspoon rosemary Salt and pepper to taste Instructions: Prep (10 minutes): Add the beef, carrots, potatoes, and onion to the slow cooker.
