Empirical is the most exciting and innovative company in the spirits space. Given that the founders came from Restaurant Noma and the products make use of ingredients including heritage wheat and barley, as well as yeasts not often used in spirits distillation, that statement isn't all that shocking. Their new product, on the other hand, was completely unexpected. In collaboration with PepsiCo, their new spirit brings the flavor of Doritos to the world of spirits. Usually, I would roll my eyes at this kind of product (think King Cake Vodka for Mardi Gras 🤢), but I can't wait to try this. I suppose one indicator of being truly innovative is doing something wholly unexpected and owning it. Who else wants to try a nacho cheese on the rocks? #innovation #spiritsindustry
