🐷 From Farm to Table: The Secrets Behind a Grand Champion Pork Carcass 🐖 Raising a pig and presenting it in the show ring is a testament to dedication and hard work. But what happens after the show? Carcass shows, unlike live shows, occur at the processing plant. In a chilly 36-degree environment, the day starts by exposing the loin eye of each carcass to assess color, marbling, and firmness—qualities essential for pork chops. Measurements of back fat and loin eye area are taken, and the percent of fat-free lean is calculated. This percentage estimates how much product the carcass will yield. Balancing lean and fat is key in pork production. Processors prefer leaner products but value some fat for items like sausage. Color, marbling, and firmness indicate the quality of fresh products like pork chops. A high percentage of fat-free lean combined with superior meat quality ultimately determines the makeup of a grand champion pork carcass. Successful pork production starts with the end goal in mind. When breeding gilts, genetics are chosen for mothering abilities and offspring potential. Similarly, achieving a champion carcass involves focusing on high fat-free lean percentage and superior meat quality.
