🌟 Understanding Your Coffee: More Than Just a Morning Ritual 🌟
For many of us, coffee is an essential part of our daily routine. But how often do we stop to consider the journey our coffee has taken from bean to cup?
In a world where misinformation and mis-selling of inferior quality coffee are rampant, it's more important than ever for coffee drinkers to be informed about their coffee's origins and processing.
🌱 Source: Every cup of coffee has a story that begins at the farm. The region where the coffee is grown affects its flavour profile. From the lush plantations of Bababudangiri hills in Karnataka to the unique flavours of the Nilgiris in Tamil Nadu, each origin brings distinct characteristics to the beans. Unfortunately, not all coffee labels truthfully represent this journey, making it essential for consumers to seek out transparent and trustworthy brands.
🔄 Processing: The journey from coffee cherry to bean involves several processing methods. Whether it's washed, natural, or honey-processed, each method influences the final taste. However, many brands don't provide clear information about these processes, leading to a lack of understanding and appreciation for the coffee. By educating ourselves, we can make better choices and discover new, genuine flavours.
☕ Quality: High-quality coffee is a result of careful cultivation, precise harvesting, and meticulous processing. Specialty coffees, in particular, go through rigorous quality checks to ensure exceptional taste and aroma. Unfortunately, there's a lot of inferior coffee being mis-sold as premium, which can deceive even the most discerning consumers. Investing in quality coffee not only guarantees a better drinking experience but also supports farmers who prioritize excellence.
By taking the time to learn about your coffee's journey, you can make more conscious choices that benefit both your palate and the environment. Don’t fall victim to the widespread misinformation – know what you're drinking and where it comes from.
Next time you brew a cup, think about the incredible journey it has taken to reach you. Let's celebrate and support the craft of coffee-making by understanding and appreciating the story behind every sip. 🌍💚

Continuing our exploration of the world of tea, let's delve deeper into the fascinating science behind the perfect cup. From the lush tea gardens of India to your mug, each tea leaf undergoes a remarkable journey.
Unveiling the secrets:
Oxidation Levels: Do you know that the level of oxidation is critical in the transformation of new tea leaves into black, green, oolong, and white teas, each with different qualities and flavour profiles?
Water Temperature and Steeping Time: These two elements are critical to realising the full potential of your tea. The proper temperature and steeping duration allow the tea leaves to reveal their full flavour and aroma.
The Terpene and Flavonoid Symphony: These natural components tremendously impact your favourite beverage's aroma, taste, and potential health benefits. At ATC, we carefully consider these scientific criteria when creating unique blends that provide a balanced mix of flavour and potential health benefits.

Another tea-harvesting season is here! 🍵🇨🇳 While global tea production and demand continue to grow, let's check in on how tea is traded locally in the Chinese countryside. More below.
GLOBAL EXPORT
✔️ After water, tea is the most consumed beverage in the world
✔️ Since 2016, Kenya, China, and India have consistently been the largest producers and exporters of tea globally, exporting approximately 557 Mt, 369 Mt, and 282 Mt, respectively in 2021.
✔️ All while the EU, the US, and Japan have consistently been the biggest importers, importing around 225 Mt, 115 Mt, and 108. Mt in 2021, respectively.
PRODUCTION IN CHINA
China has 3 distinct tea-plucking seasons, by the way: in spring, summer and autumn with each season offering something special.
🍵 Spring
Pre-Qingming teas like black and green teas are first to arrive, signifying the start of the season. As the season progresses, we see a variety of teas including yellow, white and the famed oolongs. Late spring introduces us to more green, oolong, and pu-er teas, each with a distinct character.
🍵 Summer
Summer yields a bounty of standard black, green, and oolong teas, perfect for refreshing iced brews.
🍵 Autumn
Oolongs and some pu-er teas are at their best, as the cool weather signals the tea bushes to prepare for rest.
DOMESTIC TEA CONSUMPTION
✔️ China's tea market is expected to generate a revenue of US $51.9 billion in 2024, with a CAGR of 5% from 2024 to 2028.
✔️ The per capita revenue in China's tea market is estimated at US$ 35.5 for 2024.
✔️ The market volume is anticipated to reach 2.6 billion kg by 2028, with a significant middle-class demand for premium tea.
What’s your take on the tea vs coffee markets in China? 😜 I’m a tea person, so I’m biassed.

How you ask your question depends on your TG, which includes the choice of words and the framing of the question itself. You may be sitting in air conditioned offices but you don't share the same ways of expression and socialization with the remaining individuals and groups of Bharat.
Example: When it comes to offering non alcoholic beverages to guests, this is how people from different sections go about it, more or less...
1. Upper Class - Can I get you something soft?
2. Middle Class - kaun sa cold drink lenge aap?
3. Lower class - thande mein kya loge aap?
In case they are offering something specific, depending on the SEC, it can be from the below options, all made from the same ingredients - lemon, water, sugar and some salt.
Kaffir Lime Cooler
Virgin Mojito
Lemonade
Fresh Lime Soda
Nimbu Pani
Shikanji
Nimbu Soda
Nimbu Sharbat
One drink, but different ways of saying it and perhaps making it. To simplify it further...
1. People from metropolitans drink soft beverages.
2. People from small towns/cities drink cold drink of their choice, which is not same as rooh afza or any other summer non alcoholic beverage.
3. Bharat ki mitti se jude hue log thanda pite hain.
So what should I get you - soft beverage, cold drink or thanda?

Kamairicha is a Japanese pan-fired green tea made by heating the leaves in a pan instead of steaming. This is generally the same method used to make many Chinese green teas and has been practiced for generations in Southern Japan. Kajihara Tea Garden’s best selling traditional tea. This original kamairicha is produced from 60-year old tea bushes grown from seed and blended with okuyataka and yabukita cultivar tea leaves.
Because the main bushes are located on a steep slope (at least 30 degrees), the tea is made with a lot of care and effort. Made through the traditional kamairicha producing method, this tea has a relatively strong scent but is refreshing to drink.
Kamairicha (literally pan-fired tea) is a processing method that was brought from China in the 15th-16th century. Instead of steaming the leaf to stop oxidization, they lightly heat the leaf in a pan to stop oxidization. It is then rolled while drying. Kamairicha products are mostly made in the Kyushu region.
Kamairicha has a mildly roasted flavor with more sweet and fresh notes than bitter ones. It also has a sweet, mildly roasted flavor because it does not undergo the usual steam treatments of Japanese tea and does not have the characteristic astringent taste of most Japanese tea.
