How Hotels and Resorts Benefit When They Include Zero Free Offerings… Let’s face it. It’s not the food and beverage bill where hotels make their biggest profits; it’s the cost of the rooms themselves. But what some properties don’t understand is that by offering a few custom, curated zero free beverages and a few decent NA wines that they invite a whole new demographic to the table: the sober, sober-curious, and a variety of other non drinkers. As a travel advisor who specializes in alcohol free travel - and an avid traveler myself - I look for the properties who focus on quality in their food and beverage selection. Do I not book clients at properties if they don’t offer these beverages? If I find a resort with the same quality accommodations AND zero free beverages, then I book the latter. As I’ve said in the past, the luxury brands get it; they hire mixologists to curate their beverage menu which adds more value and choice for their patrons, but the smaller properties who don’t have the budget for a mixologist can still add quality NA beverages to their menus by simply having bar staff that know how to craft a cocktail and a few set recipes on the menu. The growth of culinary travel — “According to a Virtuoso survey, 70% of its travel advisor members last year reported an increase in demand for culinary-focused travel and that 20% of their clients book trips with food and wine as the main focus.” (Travel weekly) Keep this in mind when you’re developing hotel+ packages/optional experiences. If you provide F&B at your property, maybe a cooking class onsite with your chef… a visit to a local winery… a neighborhood dine around… a pub crawl, etc., etc. Use your local resources and your imagination.

Every now and then you need someone else to cook for you, to bring you a nice drink, and to do the dishes for you afterwards… agreed? How lucky are we then, in Australia, to be surrounded by talented and ambitious people who often work ridiculously long hours and sometimes risk everything simply so they can provide you with such a wonderful service? Going out now and then to discover local establishments is delightful and so good for your soul isn’t it? When you find that perfect combination of fine dedicated professional service, great food, excellent wine selection, beer, spirit or cocktail choices all wrapped up in a beautifully maintained establishment with well thought out ambience, you have indeed hit the jackpot… Funnily enough, in order to make a restaurant, hotel or wine bar run as smoothly as clockwork, surprisingly it’s what you don’t see that makes for a world class and seemingly effortless dining experience, and that my friends is the true art of hospitality… You don’t see training. You don’t see hours of kitchen prep (mise en place) and dining room set up. You don’t see cobwebs. You don’t see crumpled menus. You don’t see tired or lazy wine lists. You don’t see coasters stuck under wobbly tables. You don’t see lunch crumbs on the dinner floor. You certainly don’t see sticky front door handles and you don’t see grumpy staff. You see a dedicated team living to create lasting warm fond memories that are truly embraced, by you, their guest, long after any price asked for is forgotten. That feeling of pure dining pleasure, and being looked after professionally, in a courteous manner, along with sharing precious moments with your chosen companions is indeed priceless.
