Happy foodie Friday! Today we're bringing you a delicious Mediterranean-Style salad! This salad is high in protein, low GI, and has a bunch of anti-inflammatory ingredients throughout. Comment any new recipes your would like to see below. INGREDIENTS (serves 1): 1/3 cups uncooked quinoa 1.5 cups baby spinach 6 medium olives 5 Cherry tomatoes 2 slices canned beetroot 1tbsp fetta cheese 120g cooked chicken breast OR 1 fillet of fresh salmon OR 90-110g tin of tuna in fresh water/olive oil METHOD: 1. Cook the quinoa as per packet instructions. Once cooked, set aside to cool. 2. Add the baby spinach, olives, cherry tomatoes, and sliced beetroot to a bowl or container. 3. Shred or dice the chicken breast and add to the salad followed by the cooked quinoa. Toss gently to mix the ingredients. 4. Crumble over the feta to serve. This One Habit Changed My Life Pretty bold huh? But very true… Making recipes can be very time consuming and require a lot of ingredients.. A work around for this is… One pan meals…well in this case two You literally put everything in one pan and bake! It cuts down on the prep time and gives me more time with the family 👨👩👧👧 Recipe Details: Salmon: 2lbs Raw Garden herb 1/3 less fat cream cheese: 60g A shit load of broccoli Cherry tomatoes: 1 cup chopped Tri color rotini: 1 box Olive oil: 2Tbsp Minced garlic: to your tasting *something I would add is Parmesan cheese for extra flavor Steps: 1. Place everything but the pasta in the pan 2. Bake at 400 for 15 minutes 3. Cook pasta and mix in pan once cooked 4. What is your biggest road block to eating more real food and less processed food? Time is one that I hear the most often. There are ways around that road block. One I find super helpful for my family is making extra for dinner and repurposing for lunch. Last night’s spring roll fillings and dipping sauce thrown on top of some quinoa (or brown rice) made today’s lunch extra delicious!
