Lessons from 12 weeks in a high-volume restaurant: 1. Plan, plan, and then plan to plan more 📕💻. In my role as Patrao (General Manager), it’s not as much about hard work as it is about planning and organizing. Fifty people in my team need to feel seen and heard and know that their casual drinking money job or their future career is being taken seriously. So, ensuring I’m available is essential. 2. Go for gold ⭐️ - I entered a successful group, so galvanizing around record sales hours, days, and weeks enabled alignment to fire us up. For the record, we crushed it, beating the previous record week by over £7k, changing what we previously thought was possible. 3. Efficiency matters ⌛️ - By increasing our supply deliveries, cook line capabilities, tweaking non-sales generating hours, and adjusting restaurant layout, the team’s day-to-day is smoother with less time suck at crucial points on shift. 4. Succession (not Waystar Royco) 😝 - In a competitive industry, you cannot rest on your laurels assuming your team is content standing still. Having promoted 8 Nandocas to Buddy Trainer, trained two Supervisors, and now promoted a Supervisor to Second Assistant Manager, the next 12 weeks are set to be full of L&D, encouragement, coaching, trial and error but most of all… growth.
