Team Member Highlight: Chef Juan Carlos “JC” Flores Valles Where are you from? I’m from Acapulco, Guerrero, Mexico. How long have you been at Madeline? I’ve been here for around three years. What is your favorite part about working with guests? My favorite part is sharing experiences with them in our own language: sharing the table, our work, and creating the best experience possible. What is the biggest learning experience you’ve had? I’ve learned that sharing a table also occurs in the heart of the kitchen; how we work together defines our success. What is the best compliment you’ve received? When our team feels confident and expresses gratitude for the support and knowledge gained. It shows in the positive vibe on the floor and how much they appreciate our work. What is your favorite thing about mountain chic attire? I love how it connects us to nature throughout the seasons. The jackets and local jewelry are particularly appealing to me. What are three things you can’t live without? Music The idea of sharing a table (wine and food) Off-road and road trips, staying connected to nature. What do you notice about someone when you meet them? I pay attention to how they care for others. What is your favorite book? Corina by José de La Serna Psicomagia by Alejandro Jodorowsky What is your favorite time of day at Madeline? When the entire team comes together, sharing a positive vibe and striving to do their best with resilience and consistency. Watching the sunsets on Last Dollar Road and enjoying the fresh powder on a snowboard day.
