F&B Catering & Hospitality venues are piled up with a huge variety of crockery, ceramics, plates, china & table top stuff. How are new styles, types, ranges, gimmicks, fashions & fads arrived at & who designs them? I recall in the 80's I was crying out for 12" plates, especially white ones from manufacturers but to no avail. I began to wonder did I have 3 heads? I didn't want ones that were half an inch thick with Mother's dinner table patterns which bounced off the floor .Old crusty style hotel dining room ranges dominated for years much to Chefs horror, but little changed. Eventually there was a sizeable shift change in the market probably brought on by the creation & increase of Chefs profiles & a more noticeable understanding in the market from manufacturers. Suddenly Chefs were bl**dy vocal and listened too, some rock and roll started. For years they had probably spent most of the tableware budgets in Mediterranean countries, Europe & possibly not Stoke on Trent. The dreaded squares, triangular & rectangular crockery (love it, loath, it hate it or hide it)became the thing to have. Next came black, striped & loud colours & the UK 'Potters' suddenly woke up & the world began to really further notice them. Hats off it happened big style. In KSA Saudi, I found an old time (genuine), artisan potter based under a stone cliff near the desert. At the time I was researching Food travel & Gastronomy in the country,.........Desert truffle hunting, Caviar farming, Salmon farms, Lawrences home, Crab festivals & opportunity to produce Sea salt etc . Around lunch time the Potter would rustle up (a small verbal menu) by chucking in a few food dishes into the prized fired Kiln used to produce pots for local town. Visiting old & modern markets & Souks in Kuwait, it hit me that Restaurants & Chefs could & should consider working in close collaboration supporting & in sync with local Potteries (compliance checked). Really start supporting and regional locally & probably without having to have a minimum production run of 10,000 units. In Kuwait there are some many real local trades. Whilst box shifting, moving ceramics half way around the world hits sales targets, are we not missing something? Now imagine your local F&B College school where Potter, Interior designers, Chef, Butcher, Agriculturist & Bakers and those who R&D kitchen new equipment all shared the same site & cross learnings teaching and apprenticeships were fertilised? What a plethora of ideas they could ferment and bake up into huge range of delights & they could produce the magnetic attraction for a melange of genuine trades crafts & ‘industry fantastic’ learnings.
