"You can't paint over the sign," they said. "When you go out of business, we want to go back to the old sign." Well thanks. This was actual feedback I got from one of the members of our local historical community when I applied for new signage for my very first coworking space. No better way to make a new business owner feel welcome in the community than predicting their demise and letting them know the signage of a business that left years ago would be better to see than yours. This was shortly after the local newspaper wrote "local business owner to offer hourly stalls to transient workers". This was shortly before the neighbor came out and spray painted the property line onto the side walk and watched as we planted a new garden to ensure none of the plants crossed over onto her property. Sometimes it's hard to know if what you are trying to do will be welcome, is needed, is what is right. Starting something new is putting yourself out there for everyone to see, to comment on, and to critique. And as we know, often the most negative voices are the loudest. I do think however, that it's important to be able to look at things from all sides - if you can't onjectively look at all aspects of your business, handle some constructive criticism, and aren't willing to overcome a few obstacles then are you really that commited to your vision? This blog is a rambling attempt to take you through the musings, wondering, and doubts that I sometimes worry about when starting a new project. Let's face it – we've all been there. You walk into a portable toilet at a public event and instantly regret every decision that led you to this moment. It's cramped, it's uncomfortable, and if you're with a child, it's a nightmare in the making. David Sauers, co-founder and CEO of Royal Restrooms Franchise, had a similar experience that led to a revelation. While attending a Shakespeare in the Park Festival, he found himself in a tight spot – literally. His daughter, in the throes of potty training, was touching everything in sight, and David was in full panic mode. This incident sparked a thought: Why do we, in an era of innovation and convenience, still settle for subpar restroom experiences at public events? Why hasn't anyone challenged the status quo and demanded better? David's story is a reminder that sometimes, the best business ideas are born out of sheer frustration and a desire for change. It's time we rethink the "necessary" discomfort of public restrooms and push for something better. It’s amazing to see big-name chefs come onto Substack. Content used to be kind of a losing — or at best, break even — play for restaurant chefs: It's expensive to create and difficult to monetize at any meaningful scale outside of cookbooks. And for many (not the Ottolenghi’s of the food world, but for many of the chefs who primarily earn through their restaurants) cookbooks themselves are not always a major financial win. That they can immediately monetize via Substack subscriptions absolutely changes the game for restaurant chefs. Beyond the rich discussions and invaluable networking, a lighter debate stole the show – pineapple on pizza. Yes, you read that right. Diving into sessions and workshops with industry peers like @jason-brooks-97147b4, @malotke-meslin, @dr-reggie-thomas-3376731b2, and @andrewpcocco was invigorating. These gatherings are a testament to the collective wisdom within our community and an incredible opportunity for personal growth. However, during an ice-breaking section of Jason Brooks' presentation, the unexpected topic emerged: Pineapple on pizza—yea or nay? This light-hearted debate not only provided comic relief but also underscored the beauty of these conferences. Amidst rigorous discussions and learning exchanges lies the essence of connection over simple human moments. So here’s to more enlightening seminars, innovative ideas...and solving culinary controversies!
