There are four communes in the St. Emilion Satellite appellations (AOC) which are entitled to use “St. Emilion” as a part of its appellation name: Lussac Saint-Émilion, Montagne Saint-Émilion, Puisseguin Saint-Émilion and St. Georges Saint-Émilion. Puisseguin Saint-Émilion is the most eastward of these and is located about 50km east of Bordeaux, and is similar to Saint-Émilion in its predominance of Merlot. It benefits from its south-southeast exposure to the sun, ideal for ripening Merlot, with clay limestone soils. Puisseguin St. Émilion has a slightly cooler climate than St. Emilion as it is situated further from the Dordogne and requires later harvesting dates. Merlot accounts for 80% of the vines, with Cabernet Franc as the second variety, and Puisseguin Saint-Émilion only produces red wines, with small amounts of Cabernet Sauvignon and Malbec. PSE produces very high quality, lush wines, suitable for aging. The appellations name comes from "Puy," an old Celtic term meaning “the hill of the powerful wine," and Seguin, an officer who served under Emperor Charlemagne, forming Puisseguin. *Pavillon de Vieux Chantre, Puisseguin Saint-Émilion, 2022* Appearance: Dense, deep crimson. Nose: Red and black fruit: cherry, blackberry, earth, some smoke, floral notes. Palate: Fleshy and full bodied. Rounded tannins, balanced acid. Tart red cherry, blackberry, earth. Aging: This wine should age well, given to its region. Merlot is more limited in aging capacity vs. Cabernet Sauvignon. With the abundance of tannin, I’d suggest this is drink now until 2034. If you drink now, it doesn’t hurt to decant for an hour, but I’d suggest “dropping the shoulders” and allowing the wine to open in the glass. #KosherWineTastings

Forty of these hectares are used to produce Unico, aged for at least ten years (in barrel and bottle) is one of the longest in the world. In the winter vines are pruned to lower the grape yields and thereby optimizing grape quality. Pruning also allows the vigneron to control the vine and train it to grow certain directions. There are a variety of styles one can prune his or her vine, which is why, as you drive past a vineyard, one may appear different than the other, bringing into question, 'why do those vines grow different than these ones.' For example, a vineyard could use a single cordon or double cordon method. This method is where vines grow up from the ground and then are trained to run parallel to the ground. A single cordon goes one direction, whereas a double cordon goes in both directions (think of a gymnast performing a split on the beam. One leg goes east, the other going west) Another training system is the gobelet system, also known as the bush system. It earned its name because it resembles a wine glass or goblet (or a bush) by having a short trunk with the vines growing vertical. This method is common in southern France because it protects the grapes from the wind and sun and in southern France they tend to get a lot of sun and some high powered winds (also known as Mistral). #themoreyouknow #wine #pruning #winter

EN PRIMEURS 2023 - CHÂTEAU CLINET RELEASE Located in the heart of the Pomerol appellation, Château Clinet and its famous gravel plots constitute one of the most beautiful references in Pomerol. This property on the right bank of Bordeaux was bought in 1999 by the Laborde family. A benchmark among the great Pomerol wines, Château Clinet watches over an exceptional vineyard of 9.8 hectares in production on a clay-gravel terroir. The vineyard is managed using sustainable agriculture. A mild winter gave way to a spring marked by an episode of frost without impact on a vineyard in the early vegetative stage. Then mild conditions, punctuated by some rain, favor rapid growth of the vines as well as rapid and early flowering. If summer begins with an alternation of sunny and rainy days, the heat peaks recorded at the end of August and the beginning of September ensure good ripening of the berries. DIFFERENCES BETWEEN THE LEFT AND RIGHT BANK WINES OF BORDEAUX Bordeaux is split in two by the Gironde Estuary, which divides into the Dordogne and Garonne rivers. The Right Bank is the area to the north of the Dordogne river and the Left Bank is the area directly south of the Garonne River, both of which feed into the Gironde estuary that meets the Atlantic Ocean. The joining of these three forms a shape like an upside down ‘Y’ with the two banks on either side and the area in between known as the ‘Entre-deux-Mers’. The Left Bank encompasses the Médoc best-known appellations – from north to south – are St-Estèphe, Pauillac, St-Julien and Margaux. South of Bordeaux, Pessac-Léognan and Graves, plus the sweet wine producing appellations of Sauternes and Barsac. The Right Bank’s most famous appellations are Pomerol and St-Émilion, the latter of which has four ‘satellite’ appellations. These are Montagne-, Lussac-, Puisseguin- and St-Georges St-Émilion. The Right Bank also encompasses the: Côtes de Blaye, Côtes de Bourg, Fronsac, Canon-Fronsac, Lalande-de-Pomerol, Francs Côtes de Bordeaux and Castillon Côtes de Bordeaux. While all of the Left Bank wines are usually blends, cabernet sauvignon is the dominant force here. Merlot, petit verdot, malbec and cabernet franc play supporting roles. The terroir of the Left Bank is mostly flat with gentle undulations in the landscape. Soils are largely composed of alluvial gravels with limestone underneath. Wines typically have more tannin and a bigger overall structure than their Right Bank counterparts. Right Bank wines are predominantly merlot-based, with cabernet franc, cabernet sauvignon, malbec and petit verdot used as blending components. The most famous terroir is the large limestone plateau that surrounds the pretty town of St-Émilion itself. This is where the majority of the appellation’s great domaines can be found. In nearby Pomerol, on the outskirts of the riverside entrepôt of Libourne, there is no limestone. However, the composition of the soils is much more like that of the Left Bank with alluvial gravels and sand, albeit with much more clay mixed in. Many of the best châteaux border St-Émilion. The wines tend to be rich in fruit, softer in mouthfeel with less tannin and acid than wines from the Left Bank. And while there are plenty of wines that are also enjoyable when young, the best wines from the Right Bank are more than capable of ageing happily for many decades. Top Left and Right Bank Bordeaux châteaux can produce extremely long-lived wines, particularly in the right vintage conditions. On the Right Bank, the St-Emilion Classification, first introduced in 1955. Unlike the 1855 Classifications, this ranking is frequently reviewed, currently every 10 years. Generally, Right Bank red wines are less expensive and ejoyable earlier than those from the Left Bank. Right Bank estates are more famous, and priced much higher.

Côte 136 Syrah, Pech Cézarine is part of a range launched in 2020, reflecting the special qualities of particular vineyard plots around Château Cazal Viel and Château Auzines. The word 'côte' means slope (which averages an altitude of 136m in this vineyard plot) and the word 'pech' means small hillside in the old Occitan language - Cézarine is the name of the small hillside beside this plot on old ordnance survey maps. This Syrah expresses the unique terroir of limestone-clay soils and wild garrigue found in our St Chinian vineyards. The grapes for this cuvée are harvested at dawn, then we use short vinification at a moderate temperature, along with soft extractions. A small amount is aged in new French barrels, adding depth and complexity.
