Based on our research, few consumers prioritize texture/ touch as a key sense when selecting foods and beverages, but there is plenty of evidence to support the idea that texture is critical in driving satisfaction. On Monday, Mike Kostyo, in his #mondaysparks, shared an ice cream product that came with a gorgeous lattice top and cherry filling that created surprise and delight as well as added texture. When I saw this article from Food Business News (https://lnkd.in/gG3yis98) in one of my morning newsletters, it reminded me of that product. There's no question US food/ beverage manufacturers and operators should be looking more often abroad for trends and inspirations, but I also love rethinking the ice cream experience beyond new mix-ins. Are European consumers moving towards plant-based foods? 🤔 The latest consumer research from the Smart Protein Project shows that European consumers are reducing their consumption of animal-based products and looking to increase their intake of certain plant-based foods! 🌱 Some key findings included: - 51% of European meat eaters reduced their annual meat intake in 2023, with Germany, France, and Italy leading the way - 53% of Europeans intend to increase their consumption of legumes - 40% plan on consuming more plant-based alternatives - 38% of Europeans are currently following a flexitarian, pescatarian, vegan, or vegetarian diet If you want more insights like these, watch our interview with Elsa Guadarrama, lead researcher on the consumer survey, for the ProVeg New Food Hub.
