Some of the native Turkish varieties include the Yapıncak and Papazkarası grown in Thrace; the Sultaniye of the Aegean coast; the Öküzgözü and Boğazkere (used to make Buzbağ) of Eastern Anatolia; the Çalkarası of the Denizli Province in Western Anatolia, and the Kalecik Karası, Narince and Emir of Central Anatolia. In recent years, some of the international grape varieties have increased their presence, including Sémillon (known as Trakya), Riesling, Muscat, Gamay, Cinsault, Grenache, Carignan, Cabernet Sauvignon and Merlot.

P.S.2 you have to start from a fact: with a complex territory, 45% is mountains (the Alps up to 4618mts asl), 50 indigenous grape varieties and 15 subregions, the approach must be opposite to a region that sports mainly 5 subregions and 2 grape varieties (two among the world's greatest). P.S.3 the approach to wine in Piedmont is per complexity and intensity: we go from some simpler varieties for daily consumption (e.g. Grignolino, Dolcetto, Erbaluce, Cortese, Freisa) to the complex ones (e.g. Nebbiolo, Timorasso, Nascetta, Ruché, Albarossa) and when we arrive to Nebbiolo not only we have different subregions, but different clones per subregion: - Lampia, Michet, Rosé in Langhe and Roero - Picoutener in Carema (and Donnas, VdA) - Spanna in Lessona, Bramaterra, Ghemme, Gattinara - Prunent in Ossola - Chiavennasca in Valtellina (Lombardy) P.S.4 when we arrive in Langa, we have then Langhe Nebbiolo, Nebbiolo d'Alba and finally Barolo and Barbaresco. P.S.5 Barolo and Barbaresco are Grand Cru and their MGAs are Grand Crus of Grand Crus. They are not "simple" AOC village. They are the top of the subregion's pyramid. So it is for Lessona, Ghemme, Gattinara, Carema. When a wine in Piedmont bears the name of the village it's a Grand Cru. P.S.6 this is the way you have to approach Piedmont. Chalk or clay - which is best for growing vines? There are many, many opinions on this. My experience is that wines in Kent produced on both types of soil have their own characteristics but in terms of quality and complexity, the standard is equally high.

Girolles / Chanterelle (Cantharellus cibarius) After a bit of a break I was very happy to be out spotting mushrooms to find a small patch of these. It was a very small spot but as usual on the way home I spotted another. Girolles mushroom bhaji made sense so I’ll post on that process later today. This fact this popular Funghi known as girole in France and chanterelle in Britain is annoying especially in kitchens as the Chanterelle in French is the known as the winter chanterelle in Britain. Anyway… For now here is how I spotted them and avoided mistaking them for other mushrooms. Most common confusion is with the false chanterelle and the Jack O’Lantern (moreso in the US as not common in Britain). Also it’s a good family to get to know this family as there are many great edibles within it showing similar features mainly the ridge like gills and shape. I generally look for mixed woodlands with plenty of beech & birch looking for golden egg yolk colour amongst the moss. On looking at the gills are much more like forked ridges that run down the stipe (stem). The smell is mushroom-y but also subtle apricot. Once cutting through the mushroom it’s also noticeably white on the inside.
