Celebrate World Chocolate day with us on July 7th! Chocolate…… For most of us the mere mention of the word chocolate makes us mentally or even verbally make a ‘Mmmmm’ sound. Sheer indulgence! From its rich velvety texture combined with its creaminess that melts in the mouth, to its sweetness that lingers in the mouth, chocolate is a firm favourite with Middledale. It’s a very versatile addition to any dessert and even a curry, from cheesecakes, sponge cakes, brownies to pouring sauces. One of our favourite’s recipes here at Middledale is a no bake Chocolate Cheesecake. Follow our recipe to see what you think. Ingredients · 8 digestive biscuits · 40g unsalted butter · 250g cream cheese · 125g caster sugar · 180g milk or dark chocolate · 20g cocoa powder · 150ml of double cream Instructions 1. Line the base of an 18cm round loose bottomed tin with greaseproof paper 2. Crush the biscuits, melt the butter in a pan then add and mix with the biscuits – then pour into your tin (pressing it down) set aside to cool in the fridge to cool. 3. Break up the chocolate into a glass bowl then rest the bowl over a saucepan of nearly boiling water to melt the chocolate. Let this cool once melted. 4. Using a different bowl whisk the double cream until it forms soft peaks then add the cooled melted chocolate. Then sift the cocoa powder and the cream cheese mixture. 5. Spread evenly with a palette knife the cheesecake mixture over the biscuit base. 6. Pop back cheesecake back in the fridge to set (will normally take a couple of hours) 7. Then serve! You can top with chocolate crumbs or fruit or anything you like. Delicious!
