As we near the end of the BOH series where we go through each area and discuss why BOH is such a crucial part of all our projects, we’ll now focus on all the different types of storage areas. There are 3 primary kinds of storage that we need to concentrate on: General Storage Dry Storage Refrigerated Storage 1. General Storage While there is a tendency to think of storage areas as unproductive and passive spaces, they are always built in the most interesting ways where one can expand its capacity without increasing the size of the space. It has a system of grids, moveable shelves, retractable or hinged shelves and accessories which can be directly put on any surface therefore increasing the capacity to store a variety of items. Storage systems can also be attached overhead to the ceiling without disturbing the groundwork happening under it. A track-style system, with only 1 aisle can give you up to 40% more storage space than any other. The aisle space should be at least 3 ft. In the food service industry, you need to remember not only the number of products but also how long you are going to store them before putting them to use. This is known as the inventory turnover rate. 2. Dry Storage The standard storage room is at least 8 ft wide; its depth is decided by the use. If the storeroom must be wider than 8 ft, increase it in multiples of seven. This will allow for 2 rows of shelves, each a standard 21 inches wide, plus the 3 ft aisle. Also, note that the storeroom should open out into an aisle to maximise the storage space in the room. 3. In the NKBA and John Burns Research and Consulting Q1 2024 KBMI, the manufacturing segment index of 58 outpaced the overall 56.4 index rating, which measures current sales growth, industry health, and near-term growth expectations among U.S. kitchen and bath industry pros. This positive rating in addition to industry pros' general expectations that pent-up demand will significantly benefit 2024 kitchen and bath sales - are early signs of an upswing for manufacturing, which was the leading segment in the early 2020 post-Covid recovery period.
