Aaj ka khaana. Bilkul bahaar ke jaisa! ------- This weekend, while dining at a friend's home, I was amazed to see a fantastic and exotic spread of dishes, recreated from around the world. It felt exactly like a high-end restaurant experience but cooked entirely by the host and her very able 'maharaj' (cook). In Indian households, there's a sense of pride when someone says, "This tastes just like it does outside. This doesn't feel like it’s cooked at home!" The restaurant experience is considered the holy grail, the ultimate benchmark of culinary success. "Bahaar ka khaana" (eating out) holds a special place in our hearts. It symbolizes a release from the ordinary, an exploration of senses, and an experimentation with different cuisines and experiences. It represents the unordinary, the extraordinary. And we try our best to bring this experience home. Home, after all, is the ultimate grounding, the historical anchorage of food and culinary exploration. One can't steer too far away from it. And so we pore over cookbooks, watch cooking shows, and follow chef influencers, all in an effort to bring the extraordinary into our kitchens. To break away from the mundane "dal-chawal, sabzi-roti". The outside world’s culinary delights are the standard we aspire to, the holy grail we seek to achieve in our homemade meals. While the thrill of 'bahaar ka khaana' is undeniable, the comfort and familiarity of coming to a home-cooked meal has its unique charm. This is why, the industry that serves the "bahaar ka khaana" (but cooked at home) experience will always flourish in India.
