Freshly picked meyer lemon blossoms for a new batch of perfume! My tree is producing unbelievable amounts of flowers at a time, so this will be a multiple infusion to try to get a nice strong scent. I do love a plant with some versatility. Speaking of versatility, that is food grade ethanol. The perfume will technically be drinkable (lemon blossoms taste wonderful), and I WILL drink it and report in. 😉 #botanicalmadscientist

What are the advantages of broken star anise? Broken star anise is basically dried star anise pieces. Instead of keeping the characteristic star shape, broken star anise pieces are smaller, irregular and are often ground into powder for use. Advantages: Lower cost: Compared to whole star anise, broken star anise is significantly cheaper. Ease of use: Broken star anise has been cleaned and dried, making it convenient to use in spice blends or make five-spice powder. Rich flavor: Despite being broken, star anise still retains its characteristic aroma and spicy flavor. #StarAnise #BrokenStarAnise #SpiceMarket #CulinaryHerbs #VietnameseSpices

Bousinage: the toasting of the barrels. An essential step with a significant impact on the infusion. The bousinage transforms the wood macromolecules (lignin, cellulose and hemicellulose) into aromatic molecules which will allow a better impregnation of the character and aromas by the bioethanol used by Amouage. Each heating level has its own aromatic profile: a light toasting would typically accentuate fruity and soft spicy nuances, adding aromas of green apple, coconut and fresh woods. A medium toasting results in an intensification of toasted bread, vanilla, peppery, caramel and wild berries notes. Finally, heavy toasting would imprint a dark patina to the fragrance, adding nuances that can range from cold tobacco, coffee and moka, to cocoa and complex spices. What sets Oolong apart? Oolong tea is partially oxidized, which means it undergoes a process that is more than green tea but less than black tea. This oxidation level gives oolong its distinct taste and aroma, often described as floral, fruity, and sometimes nutty. How is it made? 1. Withering: Freshly picked tea leaves are spread out to wither under the sun. This process reduces moisture and makes the leaves pliable. 2. Bruising: The leaves are gently bruised by tossing or shaking to start the oxidation process 3. Oxidation: The leaves are left to oxidize until they reach the desired level, changing their color and flavor. 4. Fixation: The oxidation process is halted by applying heat to the leaves, preserving the flavors. This is less time than black teas. 6. Drying: The leaves are dried to remove any remaining moisture and to lock in the flavors. #OolongTea #TeaLovers #TeaTime #HealthyLiving #TeaFacts #TeaProcess #passportcoffeeshop

Broken Leaf: These teas are made from broken leaves, often offering a stronger flavor. Examples include Broken Orange Pekoe (BOP) and Golden Broken Orange Pekoe (GBOP). Do you know what chocolate conching is? Conching is the process of continuously mixing and aerating chocolate for an extended period in a machine called a conche. 🍫🧑🏻🔬 Why conch? To get a smoother texture: mixing reduces the cocoa and sugar particle size. To get a palate-pleasing taste: aeration removes any off-flavours or acidity. To enhance flavour: heating releases more complex flavour compounds. To create better storage stability: residual moisture is evaporated. Chocolate making is both a science and an art. Taste the chocolatier difference with a box of couverture Davies Chocolate. #chocolategifts #chocolatebox #glutenfree #palmoilfree

Roasting People This post challenges the familiar. There are items that only show their real value when you burn them. For example, when we grill meat with a charcoal furnace charcoal releases an n aroma compound that makes the meet taste better. We get the same compound when we burn wood. When we roast coffee beans, they releases a good number of aromatic compound that smell nicely and give coffee a distinct taste. There are materials that make your house smell good upon burning them. Examples include cinnamon sticks, citrus peels and cardamom pods. There are materials just the opposite. Burning sulfur produces a bad smell similar to rotten eggs. The real character of people shows under harsh conditions. How much do you trust “burning out” people to find whether they burn to give aroma or pungent smell? #Roasting #burning #character #harshtesting
