Pop-up restaurants were once a food enthusiast’s dream—but now they’re shaping one of the hottest trends in the culinary industry! Pop-up restaurants, aka temporary restaurants, have seen one of the largest increases in consumer interest year over year. Pop-up restaurants have been around for a while, but who could’ve anticipated their dramatic rise in popularity during the pandemic? What started as a cost-saving solution has now evolved into a booming industry trend. Yelp data revealed the rising popularity of pop-ups: from 2021 to 2022, pop-up restaurants grew by 105% in the US, and from 2022 to 2023, their numbers surged by 155%. The scoop is that these trendy ventures prioritize quality of time over quantity, with lifespans ranging anywhere from just a few hours to several months—it’s that unpredictable. They thrive on their short-lived nature and their ability to deliver an unrepeatable dine-in experience.

One of Toast’s most powerful assets is our data — and we continue to find new ways to use it to bring helpful insights to the restaurant community. For example, in Q2 we saw that spending at quick-service restaurants in some major U.S. cities moved towards breakfast and away from dinner and late-night. San Francisco is a notable exception—in addition to seeing a 6% increase in breakfast transactions, we’re also seeing a 5% increase in dinner transactions. Yelp restaurant data says: Americans shunning fast food Yelp released five-years of data about their #restaurant ratings in the United States. One major conclusion? #Americans rate independent restaurants higher than #chains selling similar fare in 50 major metro areas. Mom 'n' pop #eateries were always slightly preferred, but since 2012, the gap in #Yelp's 142 million ratings between them and chains has nearly doubled. For #fastfood restaurants, the average rating gap stands at almost a full star. This occurs while the market for eating out is rapidly expanding.
