Protein-Glutaminase (EC 3.5.1.44) is an enzyme that converts glutamine to glutamic acid in food proteins by deamidation. Thus to enhance their solubility, emulsification, foaming stability, and taste. It improves the physical properties of proteins such as solubility, emulsification, and foaming by disrupting the higher-order structure and changing the surface charge without degradation. By changing the isoelectric point, solubility improves at lower pH, preventing aggregation that usually occurs, creating new value-added proteins for various food applications.

I go on a bit about protein & what a mythological entity it is. Many switch off here because we 'need' protein, right? What would you say if I told you we don't, that it is a fallacy? These people spruiking all the protein supplements could not tell you what a protein is, let alone what an amino acid or laminin is. They would not care that our bodies extract aminos from our food, or that we work out how to link single aminos to form the exact chains needed for each bodily function - depending on individual needs - but most importantly, when we eat so called complete protein (ie meat and dairy) our bodies must then work twice as hard to break it all down into those same single aminos and then rebuild the chains with something called a laminin.
