Agree and Disagree I’ve learned to make paella in Barcelona, biryani in Galle, and trekked Lisbon’s hills in search of the perfect pastel de nata. Even if your holidays aren’t centered on food markets, cooking classes, or Michelin-starred restaurants, I bet food still shapes your travel memories. It’s about the feel of the place. You probably love rosé because you drank it with the sun on your face in a Roman piazza. Social media is breathing new life into it, inspiring us to seek out both classic and unexpected culinary adventures. I do agree that third-culture cuisine is an exciting space for cross-pollination. It’s where chefs and creators shed the constraints of “authenticity” and move past tired fusion. It’s why Italian food in New York is often Italian-American—meatballs with pasta, alfredo—delicious but distinctly different. We call this movement Roots Redefined in our 2025 Kerry Taste Trends, and we’ve been tracking the emerging flavors and dishes driving this shift for years. The growth of culinary travel — “According to a Virtuoso survey, 70% of its travel advisor members last year reported an increase in demand for culinary-focused travel and that 20% of their clients book trips with food and wine as the main focus.” (Travel weekly) Keep this in mind when you’re developing hotel+ packages/optional experiences. If you provide F&B at your property, maybe a cooking class onsite with your chef… a visit to a local winery… a neighborhood dine around… a pub crawl, etc., etc. Use your local resources and your imagination.
