The production of GÔDE is a two fold event : Let the magic work through the blending of two ancestral crafts: Brewing and the traditional method (la “Méthode Traditionnelle”). First part occurs like a traditional beer : BREWING 🍺 Second part is the well-known « Méthode Traditionnelle » 🍾 usually used to produce sparkling wines. After adding “liqueur de tirage” and “champagne yeast” a second fermentation and sparkling process take place in the bottle. Then we have a well-deserved rest in our cellars, a Maturation / Ageing on lees for minimum 6 month. Finally, we start a process known as « Remuage » (riddling process /rotated champers) in champagne racks called “pupitres”. The bottles are turned around and brought from a horizontal into a vertical position. A turn is made every eight hours and after 4 weeks, the bottles will be standing upright. We all love a spot of rosé wine, but did you know there are a few methods that can be used to make it? 1. The maceration method involves crushing red grapes and soaking them for a short period (no more than a few days) to impart some of the colour of the red skin into the wine. 2. The saignée method involves bleeding off some juice from the initial stages of red wine production. This is usually primarily to concentrate the red wine, but the juice that has been bled off is then fermented separately to make rosé. 3. The blending method involves blending a small amount of red wine with white wine to achieve the desired pink colour. 4. Direct pressing involves pressing red grapes directly with minimal skin contact, allowing only a little of the colour to go into the juice. Do you know about Lambay Whiskey's Distillation Process? 🥃 Irish whiskey is synonymous with triple distillation and Lambay Whiskey Small Batch Blend is produced using two forms of distillation process – Pot Still Distillation and Column Still Distillation. Each distillation helps to refine and collect the purest distillates resulting in a final spirit with a clean spicy flavour. The distillation process starts with “Pot Still Distillation” followed by “Column Still Distillation” which originated in Scotland to allow more efficient distillation of cheap whiskey. After the distillation process, we move onto the “Maturation” phase. Lambay Whiskey use first fills B1 (Bourbon Casks) to mature for a minimum of 4 years before being transferred to a Camus cognac cask. We do not usually name where the casks come from but if asked, they are sourced from the Kelvin Cooperage in Kentucky to our Distillery supplier. Kelvin Cooperage supplies bourbon barrels from renowned distilleries in Kentucky, some examples of barrels would be Jim Beam, Heaven Hill, Wild Turkey, Four Roses and Maker’s Mark.
