FLAVOUR TRENDS IN SNACKS : Almost one in four snackers say they enjoy the indulgence of exotic flavors and like to try something they don’t usually have. Taste profiles that cross regions are popular and growing at two to four times the category average. Fish, masala, south Asian and American flavors stand out in this regard. Snack innovation is dominated by vegetable flavors, especially onion. Recent launches are showing greater flavor variety including truffle, mushroom, seaweed and sweet potato. Mesquite and sweet barbecue are driving smoked growth, while chili and spices are appearing in a wide range of formats. As for sweet offerings, brown flavors are growing faster than total snacks, driven by caramel and white chocolate. Innovative snacks that pack a full taste and spark emotion will drive growth.

We eat with our eyes – can we see what we are eating? They call them inclusions – those delicious nuts, candies, chocolate chips, pieces of cookie dough and anything the imagination can conjure up, to add to ice cream. Consumers see them as a measure of quality, if there are many added ingredients, it must be really good ice cream. In one project, we checked to see how many more inclusions had to be added for consumers to see “more”. There needed to be at least 20-25% more inclusions before consumers could identify a visual difference. This didn’t sit well with the company - significant extra cost in ingredients before consumers could “see” extra quality and no noticeable improvement in flavour. The solution – make those additions bigger in size! If consumers can see them, they are reassured about quality. The flavour is still highly acceptable and there is no extra cost to the company. Are we fooling the consumer? I think it is more about knowing the visual cues for consumers and ensuring that quality cues are present. Gen Z in America is asking for more complex flavours. Is it the same in New Zealand? Is our cafe and hospitality industry embracing this change and experimenting with alternative flavours or are we sticking to much of the same?
Recently, Torani was featured in an article for Food Business News by Donna Berry, who discusses how younger consumers, especially Gen Z, are seeking complex and layered tastes, prompting brands to experiment with flavor fusions. Berry consults Torani consumer and customer market insight manager, Andrea Ramirez, who notes, "salted honey butter is one of the most complex flavors we’ve ever created at Torani, with notes of sweet butter, clover honey and a slight hint of chamomile, it gives drinks a distinct craveability.
