I recently went to a restaurant that had no menu. 😮 And this wasn’t a mistake or coincidence. If you have a restaurant, you need a menu, right? 99.9% never challenge this. This one did, and this seemingly odd change transformed the whole experience: The waitress came to our table to narrate the day’s dishes. ↳ It was like listening to a story instead of reading a mere list. Now, this required us to actively listen. ↳ Pay attention. Understand. Think. Ask questions. The tempo was perfect, just one 'section' at a time. ↳ Pausing to let us think and negotiate our choices within the group. Even before seeing the food, my mind was full of imagined smells, tastes and colours. They had set an expectation. Then something magical happened – the food came. A mouth-watering, hearty, delicious meal. The point of this story? That differentiation isn’t just about one feature (the menu). It’s rather about how changing one thing leads to a completely different offering. Behind the lack of a menu… ✅ There's a narration to create a connection and set expectations. ✅ There's the implication that fresh food is prepared daily. ✅ With fresh seasonal ingredients and utmost care. ✅ So, the food is actually delicious. Expectations aren’t just met; they are exceeded. There's a whole business model behind one, apparently small difference. According to recent findings from Lumina Intelligence - Food & Drink's Menu Tracker Data, menu price increases are more prominent in the restaurant sector. Chain restaurants, in particular, have experienced significant menu price growth, averaging +21.5% year-on-year. One of the driving factors behind this increase is the introduction of more premium-led dishes by operators, which could encourage consumer spending by offering higher-end menu options.
