The 4-in-1 Cacao Bean Processor machine consists of a roaster, cacao bean crusher, winnowing, and a cacao bean grinder. The roaster part is where the roasting or drying of cacao beans takes place. After the drying process, the beans are then crushed in the crusher and the separation of the shell and the beans takes place at the winnowing using a vacuum. A little wander around the factory today, seeing how the drying is going. Vanilla needs 4 basic processes. 1. Kill the enzyme action and any mould by placing in hot water for a couple of minutes. 2. Fermentation stage, warm and in the dark. For us, this takes 3 days. 3. Drying, in the sun for a couple of hours a day. Time depends on temperature! Takes them down to the desired moisture content. 4. Maturing. Basically, just leaving them in storage! We take them out to see the sun once a week, if dryer once a month. During this whole time, the vanilla is busy converting a special starch into vanillin, and it will never cease to do this providing it has oxygen. This is why we disapprove of vacuum packing. Grading is tricky, because after 2 months, grade B has suddenly become grade A! In France buying flour in the shop you can see not only information about its type, but also the extraction rate or “taux d’Extraction”. The extraction rate measures in a percentage and indicates the flour whiteness and produced weight relative to the amount of grain taken.
