It’s a partnership that could only be made in Miami: Chef Giorgio Rapicavoli is taking over the Mayfair Grill restaurant at the iconic Mayfair House Hotel & Garden. Born and raised in Miami, Rapicavoli is the force behind the popular restaurants Eating House and Luca Osteria in Coral Gables. The first Miami contestant to win the Food Network’s “Chopped,” he has grown up in the Miami culinary scene, partnering with Grove Bay Hospitality Group in 2015 to open Glass & Vine in the Grove. I've just received an email from the new Kailis restaurant in South Cottesloe - Gibney Brasserie & Grill - "...a sophisticated brasserie grill...with a high-end approach to hospitality...sets a new standard....ultimate destination dining experience in Western Australia...formal service....A new formality..." Well we shall see. As is usual their 20 something marketing team falls into the trap of hyperbole - exageration. The worrying issue, in the light of hospitality knowledge and professionalism, is the fact that a Brasserie is actually a very informal dinning concept. A nicely decorated cafe if you will with an easy menu. Really an ale house. A grill can really be called an "Indoor BBQ Restaurant" where your meat tastes burnt from the char grill. Western Australian hospitality standards appear to be at a level that a waiter taking orders at your table is now "formal service". Let's hope that Gibney isn't added to the list of restaurants from Swanbourne to South Cottesloe that mock their customers in the name of "informality" when it comes to product, prices, and service. Gibney opens on the 6th of May. Currently the interior is non-existent so it'll be impressive if they fit it out, receive stock, and train the kitchen and floor brigades.
