Thoughts from the Road: I am spending a few days in Dallas and was happy to enjoy an excellent steak for dinner last night. Tonight I get to spend some hours with a great team and eat myself stupid on Texas BBQ! I very much enjoy food history and understanding regional fare. That makes the following article interesting. I typically post about our Old Quebec Cheddar since that is my major focus. However, most probably do not know that Old Quebec is the wholesale program for our parent company S. Clyde Weaver. You see we are actually a retailer who has 11 locations across Central PA and a major player in Farmers Markets. Our top items are our, voted Best in Pa Bacon, our classicly smoked hams, our aged cheddar (cough, cough), and our sweet bologna. Here in Texas, you can find sweet bologna at Central Market and possibly a few other places, but it is a classic Central Pa product that is a regular item found in most Pa refrigerators. But what is sweet bologna? Here is a breakdown of the history and product from our owner. As the family who was critical in the creation of sweet bologna, he certainly would know! I say this all to give you a deeper understanding as to why the quality of Old Quebec is so important to us, as quality and excellence are part of the core and history of our 104-year-old company. Since our inception in 2019, we have worked on several distillery projects from single studies through to FEED projects. The distillery industry is worth £6billion in the UK and employs 29, 510 people (Ibis World). As you might expect, the companies holding the largest market share in spirit production, Diageo, Chivas Brothers, Edrington and William Grant & Sons have a strong foothold in Scotland. In fact, 9 out of 10 distilling jobs in the UK are based here. This comes as no surprise when you consider that in 2017, the value of scotch whisky exports reached a record £4.37 billion. To put this into perspective, the total expenditure by international visitors to Scotland in 2017 was £2.3 billion. Scotland's national drink accounts for 20% of all UK food and drink exports (ScotGov). Our experience with distilleries from 100 litre distillation batch craft stills, to 100 million litres per year continuous distillation means we have come across most design, operating and safety challenges. This weekend was wet one here on the east cost of Australia. Saturday was mostly spent entertaining the kids and trying to coax the dogs - neither of whom are big fans of rain - outside to do their business. We assumed Sunday would be much of the same, so to give everyone something to look forward to, my wife and I invited our extended family over for a good old Sunday roast. Our extended family totals 14 humans. That’s 8 adults and 6 kids. As Sunday roasts are one of my favourite things to cook, I was on-point for the delivery. As I’m sure many would know, there is plenty of prep work that goes in to getting a Sunday roast ready. I was going for a slow roast leg of lamb this time around. I tend to be more of a Chicken or Pork person, so I’m always a little nervous when it comes to Lamb. Getting the leg of lamb in to the oven at exactly the right time, at exactly the right temperate was my main concern. I had something of an implosion 🤯 5 minutes before I was due to put the leg of lamb in to the oven. I reached for the foil, only to find that it was the end of the roll. To make matters worse, there was no spare! I’d just experienced an availability failure in my supply chain. Fortunately, I don’t live too far from our local mall, and so within seconds I was in the car and on my way to Woolies. This supply chain issue led a minor delay in the launch of the roast, but nothing too serious. I’m happy to report that the roast went off without any other significant events and overall, from what I could tell, all 14 humans were happy with the end result. On the train in to the office this morning, I took some time to think through what I could have done better, especially when it came to making sure I had everything I needed for the roast. During my PRR (Post Roast Review), I came to the conclusion that I could have done a better job of ensuring I’d verified my DBOM (Dinner Bill of Materials). Had I spent a little more time preparing my DBOM and then making sure I had everything I needed, I would not have experienced an incident that impacted the AVAILABILITY of foil, and there would have been no need for my emergency dash to Woolies - and all of the stress that comes with that!
