Can you only pair red wine with red meat? Many people use this mantra for their food and wine pairing, going for lean white meat dishes like fish and serving red wine with hearty red meat dishes. This is a tradition that we have all observed in European cuisine, however, there are exceptions to this rule. For dishes with lean white meat, you can pair them with lighter styles of red wine, like a juicy Pinot Noir. You can also pair it with the sauce that the meat is being served with. For instance, a spicy meat-based Thai curry will go very well with an off-dry German Riesling as its refreshing taste will soothe your palate after every fiery bite. You should also remember that every palate perceives taste differently. A flavour combination that works for most will not appeal to your palate and vice versa.
