Our latest article is now out and available open-access in the journal of "Innovative Food Science and Emerging Technologies"! 🔬 The study was carried out in collaboration with AZTI (Derio, Bilbao), where the processing of the fraction was carried out in order to evaluate the effect of emerging technologies, such as ultra-high pressure homogenization (UHPH), on the bioactivity of dairy fractions. Specifically, UHPH was applied to bovine whey, the most important byproduct of the cheese-making industry, in order to evaluate if it retains a powerful antiviral activity.
