Read our latest open access publication from our #TeamDIL: "Manothermosonication – A potential alternative to thermal pasteurisation of liquid whole egg: Comparison of physico-chemical attributes" 🙌 👉 https://lnkd.in/eEuXqezK The authors investigate the impact of manothermosonication (MTS) as an alternative to conventional thermal pasteurisation for egg products, achieving more techno-functional and versatile food ingredients, which are crucial for food applications. With its innovative approach, MTS demonstrates potential food quality advantages over traditional methods. 💡 Foaming and emulsifying properties of LWE after MTS were improved. 💡 Gelling temperatures did not change after MTS, but a more elastic gel was obtained. 💡 Protein unfolding after MTS was observed by direct and indirect analyses. 💡 Protein solubility after MTS was higher, with no protein aggregation. Particle Size Analysis: Exploring the Impact of Homogenisation on Soy Milk To enhance the taste and stability of soy milk, homogenisation, subjecting the liquid to intense shearing, breaking down large fat globules particle and protein clusters, is a crucial step in the manufacturing process. Bettersize can provide the soy milk particle analysis with the combination of two instruments: Bettersizer S3 Plus and BeVision S1, so as to ensure the overall quality of soy milk product and create a homogeneous liquid that effectively prevents fat floating and protein settling. Let's talk bitter substances! 🌿 The Flottweg Decanter is a champion of separating fiber and lupin proteins from each other. 🌿 The liquid phase contains bitter compounds, carbohydrates, sugar, and other soluble flavoring materials. 🌿 To process soft sediments like lupin proteins, Flottweg produces a special decanter centrifuge. Standard decanters struggle with soft or easy-flowing solids. 🌿 The patented Flottweg Sedicanter® achieves optimized results in the processing of lupin proteins. 🌿 While a standard decanter achieves a maximum centrifugal acceleration of 6,000 g, the Sedicanter®, at 10,000 g, achieves values that were previously only possible with disk stack centrifuges. Are you ready for that kind of improvement in your process? DM me today! Let's get started. #Flottweg #Decanter #Sedicanter #LupinProteins #Efficiency #ProcessImprovement

Being a cheese lover or not, its a cool study utilizing two sampling techniques for VOC analysis. #SPME is a great passive sampling tool for the extraction and clean-up in one go. You can use SPMEs in the headspace of a sample or directly immersed. There are two options to choose from - SPME Arrow or SPME Fiber. The Fiber was the very first model, it is thin and has a smaller sorbent phase than the more recent Arrow. If you compare the two the Arrow is usually the one that is more advantageous (more robust and better sensitivity). #ITEX or in this case "vacuum ITEX" is comparable to the SPME but a more active sampling method as you generate an influx of sample into your ITEX tool either by strokes or with the vacuum. It is super powerful and can concentrate your analyte very well. One aspect of the study I also very much liked is the spiking. The spiking aimed to understand how the addition of specific reactants influenced the formation of malty aroma compounds during the cheese manufacturing process. Really cool stuff.
🧀 Happy #Cheeseloversday Yes, that is a thing. Why not get into the festive spirit by reading about aroma of Swiss Raclette-type cheese, what metabolites make it and how to measure it? 👩🔬 Meng et al 2021 used HS-SPME-GC-MS (Headspace Solid-Phase Microextraction Gas Chromatography-Mass Spectrometry) but also dynamic headspace-vacuum transfer in trap extraction followed by gas chromatography coupled with mass spectrometry−olfactometry to better understand aroma. They identify and characterize the formation over time of 3-methylbutanal (3-MB) and 3-methylbutan-1-ol (3-MBol), which are recognized as imparting a malty aroma, during the manufacture of Swiss Raclette-type cheese and the fermentation of reconstituted skim milk and filter-sterilized MRS broth. 🥜 In summary they provided new insights into malty aroma formation in Raclette cheese and strategies to control this flavor through starter culture selection. 📰 Read the full publication: https://lnkd.in/dJa6hUH8 🔬 Learn more about the methods: SPME https://lnkd.in/dUqnvFp6 ITEX https://lnkd.in/dFMaT4CB #automation #GCMS #SPME #cheese #fermentation #greenanalyticalchemistry #greenchemistry

Who says old dogs can't learn new tricks? Check out this technical note describing a direct injection method for the analysis of 9 artificial sweeteners in beverage samples. The method was applied using the SCIEX QTRAP 4500 system and achieved in-sample limits of quantitation (LOQ) ranging from 0.125 µg/mL for acesulfame K to 10 µg/mL for sucralose. The Phenomenex SynergiTM 2.5 µm Polar RP column provided good retention of the most polar analytes while achieving separation from the matrix interferences. With mean accuracies between 72% and 107% for the 1x LOQ spike, and between 91% and 114% for the 5x LOQ spike, and mean precision (%CV) of <13% for all analytes at both spiking levels, this new method shows promise in the analysis of artificial sweeteners in a variety of beverage samples.
